Ingredients:
4 rolls, halved
8 beef escalopes
4 slices of ham, halved
2 tablespoons of olive oil
1 heaping tablespoon of butter
2 cloves of crushed garlic
1 bay leaf, halved
2 tablespoons of white wine
8 quail eggs
Oil for frying
Salt to taste
Pepper to taste

1. Season the veal scallops with a little salt, taking into account that the ham is already salty, and pepper.
Coat the meat well with the seasoning.
2. In a large frying pan, heat the olive oil, butter, garlic, and bay leaf over medium heat.
Stir and let it heat up.
3. Fry the slices of ham on both sides for a few seconds.
Remove them to a plate.
4. Fry the veal scallops for about 1 minute on each side over high heat.
Pour in the white wine.
Let it simmer for a few minutes and mix the steaks well with the sauce.
5. Meanwhile, in a frying pan with a little hot oil, fry the cracked quail eggs.
Season with a pinch of salt.
After frying, remove them with a slotted spoon to a plate with paper towels.
6. On each half of bread, drizzle with some of the steak sauce.
On top, place a veal scallop, half a slice of ham, and a quail egg.
If desired, secure everything with a toothpick.
Serve this appetizer with french fries, mustard, ketchup, and cocktail sauce.
