What the guy was pointing out in this short is that the reason she survived was because she was smart and a courteous individual overall. It is because of her wits and kindness that permitted her the ability to escape. She wouldn’t have decided to poke around and look for clues in the first place if she was just like the rest of the rich influencers there who are so out of touch with reality.

Will makes sense because in the beginning you find out she's a prostitute and her jobs dictates that she takes on many roles and personas to play out her customers fantasies. The chef was certainly disillusioned by his dream that he once held dear. The times when he was truly happy was when he was flipping burgers and she gave that fantasy or dream back to him a. She plays the role of a customer and he gets to play out as chef again

She says that if they were to eat the meat a day late, they would die. As she was showing off the curing meats, someone made a joking comment along the lines of "what if we eat it a day later?" This is what prompted her to say they would die.

The guy was merely pointing out that it is because she was generally a smart and courteous individual that she was able to figure out how to beat this guy at his own game. Had she been just like the rest of those people, she wouldn’t have gone poking around and finding out about the chef’s past.

The chef is effectively saying they're stupid and/or generally insulting them. He took a simple dish, bread, and deconstructed it to its base components. He took a simple and fairly bland food (by itself), made it more bland and simple. The flavor and beauty is when it all comes together, not when it's torn apart and dissected. And to serve them this as a chef, you are basically saying either the bread was too flavorful for them so they will enjoy the deconstructed bread, or they are too simple to understand the difference and will be exited at the new nuance of the dish rather than flavor

It’s a class critique as well. The chef hates the kind of customer he’s come to serve, pretentious and privileged and eating up all the pretension he gives them because they want to feel special, that they’re accessing an experience the common man never will, all without actually giving a damn about what that experience is (the couple who had been there 11 times but couldn’t name a dish when asked). Like the coworkers say “at least we can say we’ve been there” it’s not about what they’re actually eating to them, so he can serve them breadless bread and no one but ‘Margot’ refuses to partake, because to her pretty much the entire experience is “Tyler’s bullshit” even if it’s created with objective skill, she’d rather have the cheeseburger that the chef genuinely enjoys making.
