Iron or cast iron both are equally good and from my personal experience, go for local manufacturers and get it locally. Other than for the fact that the big companies are expensive, there is no difference. Look at the kadai or tawa our mothers use, they are mostly non-stick. With constant use, they just get better.

We have cast iron kadhai at home which is more than 40yrs old.. way older than me.. taste of food cooked in cast iron utensils is different than other utensils

Dose discoloration happens in this kadai of vegetables ,dal or upma ,poha in which we use lemon??

It will happen if the cast iron is not seasoned properly. A properly seasoned cast iron will limit the interaction btwn the acid nd d iron-to a point. If using lemon, use at d very end, preferably after turning the burner off and consider reseasoning your cookware.

Aisa koi hard and fast rule nahi hai ki Dhudh garam nahi kr skte. but generally dhudh ubalne ke liye sauce pan type thoda tall utensil prefered hota hai taki dhudh ubal ke bahar na nikle

purani reet se lohe ki kadaayi hum saalo.n se use karate aa rahe hai.n , in fact, asali lohe ki kadaayi mein bani baingan ki sabji, paalak baingan ki bhaaji aur kayi recipes aisi hai jo aaj ke modern cookware mein vo taste aanaa naamumkin hai! Yahaa USA mein raakh aur nariyl ke chhilake se lohe ki kadaayi saaf karanaa aasaani se nahin ho sakataa jo Bharat mein chandi jaisi chamkili meri lohe ki kadaayi rakh sakati thi..I miss that satisfaction of cooking and cleaning my cookwares over there. Well, everything has plus and minus points. Aur ye bhi bataa dun ke ye bhaai ji bataa rahe hai ki cast iron mein slow cooking ki vajah se iron content ees mein pakaayi vanagi mein jyaadaa hotaa hai tau vo baat galat hai. Pahele ke jhamaane se hamaare vadeel buzurg bataatey aaye hai.n ki lohe ki kadayi mein pake khaane mein iron ees tarahaa judd jaataa hai jitani hamaare sharir ko jaruri maatraa mein mil jaataa hai. eesi liye delivery ke baad maataa ko sabhi chije iron ke bartan mein hi pakkaa kar ke di jaati thi!

Yes you can, bt in case you are making a tomato rich or curd based gravy, ensure that the kadai is very well seasoned. Normal curry, fried/ roasted recipes come out very well.

जब हम लोहे में खाना बनाते हैं कुछ समय में ही खाने से अलग सी गंघ आने लगती है और सब्जी का रंग बहुत काला हो जाता है ऐसा क्यों होता है मुझे किसी ने बोला कि लोहे में खाना बनाने के 30 मिनट के अंदर खाना दूसरे बर्तन में डाल देना चाहिए ताकि उसमे से गन्ध न आए और कालापन न आए क्या इससे फर्क पड़ता है?
