醉雞翼
材料:
急凍雞翼2磅
杞子2大湯匙
花雕酒
冰糖250克
(預先準備冰粒)
處理:
1. 雞翼,清水解凍。
2. 雞翼解凍後,倒去水分,加入粗鹽乸30分鐘,去除雪味、腥味,及加入少許鹹味。
3. 預備冰糖漿:
a. 清水洗淨冰糖。
b. 加入清水500毫升,大火煲滾。
c. 滾起後,轉慢火,直至冰糖完全溶解。
4. 雞翼已醃了30多分鐘,一邊輕手揸出雞血,一邊用清水沖洗乾淨。
烹調:
1. 大火煲滾1鑊水。
2. 放雞翼落鑊。
3. 轉最慢火,浸雞翼半小時。
4. 杞子,清水浸2分鐘。
5. 雞翼已用慢火浸了大約20分鐘,轉大火,滾2分鐘,熄火,擎乾水,清水沖洗乾淨,即時放在冰水內浸15分鐘。
6. 雞翼,逐隻夾起,大約用15分鐘,完全吹乾。
7. 預備一個玻璃器皿,放杞子及雞翼在內,加入冰糖漿,再加入花雕酒,蓋過雞翼面,放雪櫃內,浸6小時以上,及雪凍。
8. 完成,上碟,可享用。
Drunken chicken wings
Ingredients:
Frozen chicken wings 2 lbs
Wolfberries 2 big tbsp
Hua tiao chiew
Rock sugar 250g
(Prepare ice cubes in advance)
Preparation:
1. Chicken wings, defrost in tap water.
2. Chicken wings, pour away water after defrost. Season with cooking salt for 30 minutes to remove unpleasant smells and add some salty tastes to them.
3. Prepare rock sugar syrup:
a. Rinse rock sugar with tap water.
b. Add in water 500ml, heat up at high flame.
c. Turn to low flame after boils up, until the rock sugar is totally melted.
4. Chicken wings have been seasoned over 30 minutes, squeeze the blood from them, then rinse thoroughly.
Steps:
1. Heat up a wok of water at high flame.
2. Put wings in wok.
3. Turn to low flame, soak them for 30 minutes.
4. Wolfberries, soak in tap water for 2 minutes.
5. Chicken wings have been soaked in water at low flame for 20 minutes, turn to high flame, cook for 2 minutes. Turn off fire. Drain. Rinse with tap water. Put them in iced water right away. Soak for 15 minutes.
6. Chicken wings, pick them up, one by one, dry them up for 15 minutes.
7. Get ready for a glass ware, put wolfberries and chicken wings in it. Add in rock sugar syrup and Hua diao wine just covering them up. Put it in refrigerator. Soak for 6 hours or more and get it chilled.
8. Complete. Put on plate. Serve.
