Hello, I’ve made this traditional Dumpukht mutton recipe at home in a very easy and simple way. which is so delicious so I thought to share the detail of this amazing recipe with you all.
DumPukht is a cooking technique in which meat and vegetables are cooked over a low flame, generally in dough-sealed containers with only few spices.
‘DUM’ means to 'to keep food on slow fire' and ‘PUKHT’ means 'a process of cooking', thus meaning cooking on slow fire. Dum-Pukht cooking uses a round, heavy-bottomed pot in which food is sealed and cooked over a slow fire. The process of slow cooking gently allows each of the ingredients used in this dish to release their maximum flavour.

Here is the list of ingredients for making 1Kg and 5Kg Mutton Dumpukht. (You may adjust these ingredients as per your choice & preference).
Ingredients for 1 Kg Muttom Dumpukht
Mutton: 1kg
Fat: 150 to 200 g/(as per choice)
Potatoes: 350g/(3 to 5 Potatoes)
Onion: 1 small
Garlic: 1 bulb
Green chillies: 5-7/(as per choice)
Lemon juice: 30ml/(2tbsp)
Dough to seal the pan: Mix some plain flour & water to make a dough.( This prevents the steam from escaping, keeping in moisture).
Ingredients for 5kg Muttom Dumpukht
Mutton: 5kg
Fat: 1/2 to 1Kg//(as per choice)
Potatoes: 1-2 kg/(10-15 Potatoes)
Onion: 1-2 medium sized
Garlic: 2 Bulb
Green chillies: 10-15/(as per choice)
Lemon juice: 100ml (~7 tbsp)
Dough to seal the pan: Mix some plain flour & water to make a dough.( This prevents the steam from escaping, keeping in moisture).

Mutton/ 1kg small cut Low 1.5 hours
Mutton/ 1kg large cut Low 2 -2.5 hours
Mutton/ 5kg small cut Low 2.5-3 hours
Mutton/ 5kg large cut Low 3 -3.5 hours
*Above Cooking time are approximate. Appropriate cook time varies according to specific meat characteristics for fat content and connective tissue as well as other ingredients added to dish including liquid, meat cuts, type of vegetable, size of vegetable dice etc.
