In Spain, they're eaten for breakfast, lunch and dinner - the Spanish Tortilla. Children and grown-ups alike love them. And they are on every menu. Close to 35,000 tons of ready-made tortillas are eaten every year. In Barcelona, we visited a traditional Truiteria - which is Catalan for Tortilleria - to find out the secrets behind this dish.

Potatoes to be cut in circles being slowly fry in oil, soften more when you add the onions later on,and always use olive oil if it is "Spanish" tortilla unless you want it with a different taste.When is a bit soft " Pochar " break the potatoes that are with onions in the pan.Salt to the eggs where you pour down the mixture of potatoes and onions already fried ( filtered without the oil).

As someone who has lived all my adult life in Spain, there is something mythical about the tortilla. Like a margarita pizza, it’s only a couple of ingredients. When it’s bad or average, which is often, it’s sad. But when it’s treated with love it sings and somehow those few ingredients blow your freaking mind until you’re reduced to a puddle of ooh and mmm sounds.

I make this for my family everyday Friday ... I cook 3-4 tortillas and they eat it up ! It takes some work but it’s so delicious snd I love the feeling of feeding my family something they enjoy. I’m not from Spain but visited twice and lived there for 4 months. The tortilla was one of the best dishes my host made for me.

out of all the provinces in Spain, Cataluña is probably the least known for its tortilla de patata, there is a far richer culture of such dish in Madrid, Galicia, Basque Country, Palencia…

These simple dishes are found all over the world with no connection to Spain. In Tanzania, it is a traditional and national dish. It is called Chipsi Maeye and is served everywhere.

I was assaulted with a tortilla that was flung through an open window of the apartment building on my block. The neighborhood was ethnically mixed but one can imagine my surprise when the eggy delight landed on my head and face. I frequently heard arguments as I walked past that tenement so I guess I should have been more aware. Thankfully the tortilla was at ambient temperature or I would have been burned as well. La vida loco.

Apparently they have different styles to prepare to tortilla espanola all over Spain. In Madrid it was with simply boiled potatoes and only barely cooked onions. For me, the calalonian style looks better.

That's probably very good with the caramelized onion, but by the looks it's probably the whitest, flatest tortilla I've seen in my whole life. Good tortillas de patata are no less than two fingers thick, creamy on the inside and golden on the outside. It's a shame that so many people from outside our country will now associate one of our best dishes with that amateur-looking one

@Javi Hernandez. American here. You've never seen Mexican tortillas. It's a totally different product. They are made with corn meal or flour baked on a Comal and eaten like flat bread.

Technically yes, but there are many better recipes than this. Catalunya is not a province known for its tortillas. I would recommend the recipe by omar allibhoy.

It's quite embarassing to showcase these flat pancakes as traditional tortilla. For starters, it's mainly a home cooking dish, and the potatoes are fried in a pan on the stove. They should be cut in a particular way called "chascar" and cooked with the onions, not separately... etc, etc.

I am from Spain, but I guess the first one was the mexican. Potatos came from America, so we couldn't make it before that.

@@valije i guess name tortilla is latin based, so i guess at the time potatos arriving from new world, there was still not used spanish in mexico, or it was at the same time. Mexican tortilla is old, but before called tlaxcalli (wikipedia source)

La palabra tortilla es más antigua que la llegada del español a América y, generalmente, en España, se asocia al huevo batido y cocinado con forma circular. La patata es un añadido posterior a los muchos ingredientes que se le pueden añadir al huevo, pero curiosamente, la totilla de patata bien hecha no sabe a huevo sino a una mezcla de todos los ingredientes. Suele tener un sabor más cercano a la patata y la cebolla que al huevo. Hacerla bien es bastante complicado porque cada ingrediente debe llevar su tiempo de cocción y forma de preparación. Dicho esto, como platillo, la tortilla de maíz que usáis en México es bastante más antigua que la de patata. Básicamente porque es una preparación prehispánica y a España no llegó la patata hasta el siglo XVI.

@@a.s.6685 The recipe in this video is perfect for me. I have meant to say I've got the recipe from this video. Still makes me hungry while I am watching it, regardless its name. I just love to tease when I see something I really like :)) By chance, I have had known Mexican food culture first. So, "tortilla" leaves a different image in my mind, especially the layers of bags of flour or corn flatbread in a supermarket -Turks call it dürüm or lavash). I must admit I have learnt the original tortilla from this video. My response in Turkish is actually my resistance to admit it :)) It is surprising how things get popularized in different names and under different forms with same name. This recipe is perfect for me. I am going to use shallots instead of onions though. These days it is not easy to travel, I wish I would taste it in original place. Eggs and potatoes are perfect couple to match. I am a very dedicated follower of this KZfaq channel. I found out potatoes tasted better with a pinch of ground nutmeg, here.

As several other people have commented, unfortunately in Spanish, this is not how traditional Spanish tortilla is made. I hope you do get to travel to Spain, it's worth it for many reasons, but, fortunately, you can make perfect traditional and delicious tortilla at home anywhere in the world.

Actually I followed her recipe/ tricks and it was the best tortilla española I ever made. There is an art to Spanish omelette. Believe it or not some people make a hockey puck of an omelette! This lady’s recipe rocks! 😋

I'm from Madrid, Spain and sorry but that does NOT look like a good Spanish Omelette. Why? Well mainly because the potato should NOT be cut thinly and fried crispy. No way should you use a deep pan frier! You need a stove, ideally a gas one. The potatoes should be cut into thicker slices and fried in a FRYING PAN on medium heat with good extra virgin olive oil (never ever in any other vegetable oil). You need to turn the potato time to time, until you can easily cut it in half with a fork, ie, NOT CRISPY, but nice and soft. Also make sure to add some salt while the potatoes are cooking in the pan (also add a bit of salt later to the frisked eggs, you need at least 2 eggs per large potato, ). Also, you don't need to add onions. The original authentic Spanish Omelette (Tortilla de Patata, in Spain) is without onion, as the name suggests. So you only need 3 ingredients: Potatos, Eggs, and Extra Virgin Olive Oil. And salt. Spanish Omelette with onion is called in Spain Tortilla de Patata con Cebolla. Yes, it is also nice, so if you do use onion, don't put too much, and make sure it's soft, nearly caramelised. You add the sliced onions after the potatoes have been poaching in the oil a little while. Like I said, don't use too much onion, one medium sized onion would do, or half a large one.The onion will add a touch of sweetness to the omelette. Also, the end result, once you have fried the Tortilla, doesn't have to be so runny. Some people in Spain like the egg to be very runny but many people don't. Some people like it it just be 'moist' inside. If it's too runny you could risk the chance of getting salmonella in my opinion. Indeed, not that long ago there was an outbreak of salmonella in a bar in Madrid where several people got ill because the Omelette was too runny, ie, the egg not cooked through enough. So, it's perfectly fine if the egg cooks all the way through (you can check with a sharp knife by pricking the middle of the Tortilla) or 'nearly' all the way through, ie, just left moist in the middle. Once you turn the heat off, wait a few minutes for the Tortilla to 'set', before serving. It is also lovely eaten cold, so you can let it cool down and put in in the fridge (not freezer!) and eat it as a snack or take it to picnics or make a nice Bocadillo de Tortilla de Patata (ie, a Baguette), and eat it for lunch. Spanish Omelette, ie, Tortilla de Patata, is really nice served with some nice basic fresh salad: crispy iceberg lettuce, tomatoes, sliced fresh onions, green olives, a dash of good extra virgin olive oil, a dash of vinegar, and a bit of salt and pepper. Or you can even eat it with a very simple tomato and onion salad (with olive oil and vinegar).

No, that is a travesty. Never ever cheese, and never ever spinach. If you want spinach you can serve it as a side dish, boiled and then fried up with a bit of garlic and a bit of spanish paprika.

Not exactly, since chips and fries are both English words, while omelETTE is a French word, and tortilla a Spanish one. There are many kinds of omelette, and may kinds of tortilla, and by far not every omelette is a tortilla.

More like tortilla refers to a flat round morsel of food. A crepe or a Mexican tortilla don't have much egg as it's mostly flour but still they are called tortilla. Although due to the popularity of the potato tortilla in Spain the word tortilla becomes synonymous with that dish specifically. While chips is just a word for fried potato and crisp is more specific to the crispy chip

Bah. You are making a mistake due to the coincidence of the name. Tortilla in Spain is the name of an omelete-like dish. And tortilla in Mexico is just like bread. Two different things with the same name. Just for the record, tortilla española exists thanks to the fact that they took the potato from Peru to Spain.

Not this "tortilla". A "tortilla" in Spain is made out of eggs. It is what frenchs call "omelette". They only share with the mexican "tortillas" the name (little "tortas"), but nothing else.
