Some of you may be confused by chow mein and lo mein. Chow Mein is a literal translation of 炒面, which means fried noodles in Chinese, whereas Lo Mein is 捞面, which means tossed noodles. Both of these dishes are variations on Chinese-style noodles. Chow mein is prepared by stir-frying noodles with sauce and other ingredients in a wok. To make lo mein, cook the ingredients and make the sauce separately, then combine everything with the noodles without using any additional heat. If you're using dehydrated noodles, just blanch them first to soften them. If you're making chow mein, don't overcook the noodles during blanching or they'll be too soggy after they've been fried. For lo mein, cook the noodles through since you won't be cooking them again over heat. If you're using fresh noodles for lo mein, blanch the noodles briefly to warm them up before tossing them with the sauce and other ingredients. I'll share some links to show you a variety of chow mein and lo mein that we have on our channel. We hope you enjoy our quick and easy beef chow mein.

Beef Chow Mein 牛肉炒面 Chinese Stir Fried Noodles with Beef Recipe
Ingredients:
Serves 4 pax

Marinated beef:
300g (10.58 oz) thinly sliced chuck tender
3 tablespoons water
1 tablespoon oyster sauce
0.5 teaspoon baking soda (use baking powder if you are sensitive to the taste of baking soda. If you are extremely sensitive, marinate the beef with baking soda or baking powder for 10 mins first then rinse the beef before adding the other ingredients.)
1 tablespoon cornflour
A few dashes of white pepper
1 tablespoon cooking oil
Noodle sauce:
100ml (3.38 fl oz) hot water
0.5 teaspoon sugar
1 tablespoon oyster sauce
1 tablespoon light soy sauce
2 tablespoons premium dark soy sauce (you can use 3 tablespoons if you like your noodles to be darker -- FYI - we used a total of 3 tablespoons in the video)
A few dashes of white pepper
Other ingredients:
220g (7.76 oz) dried egg noodles (you can replace these with fresh egg noodles)
1 medium thinly sliced red or yellow onion
3 stalks of spring onion (add the stem part first when frying the onion, followed by the rest at the end before serving)
4 cloves of chopped garlic
A handful (about 150g 5.29 oz) of your favourite greens (kai lan aka Chinese broccoli or choy sum)

Yet another amazingly simple recipe from our very own "Masterchef". Who needs Gordon or Jamie when we hv our simple, pragmatic and informational Mr Roland. As I said, simple recipe with ingredients that most of us practically already hv in our kitchen. I hv a question though. Some recipes (perhaps in one of your own videos), egg white is added. Does this help in the marinating process? Tks in advance.

Looks great. I've noticed in this & similar videos that they add the noddles to pan then try to "mix" everything together. Which to my eyes doesnt seem to be very successful. I prefer to place the noodles into the serving bowl first with meat & veggies on top. Simpler I think.

I looked at your videos from a couple of years ago, new subscriber. Nice to see your recommendations on sauces as I used a supermarket Brand Soy sauce for my first try of this recipe and it was too bland had to add loads of soy sauce to taste. I think down to the poor quality of sauce , have already organised my Kum Lee soy sauce order for next time. Got the Lucky Boat noodles another channel recommended for here in the UK and will need to try the thinner ones. I got them on Amazon but I think it's better to go to a Chinese supermarket to buy them, it'll be a lot cheaper. Love your videos, short and to the point and I can cook along with them and pause and start as you have the ingredients in the description so I just need to watch the video. No talking nonsense on your video. My new favourite channel. Only just got into watching cooking videos. Well done you guys. Superb job.

Even they have their own recipes of creating those sauces. Some will be too salty. Some too bland etc. we have tried and tested different brands before settling on certain Ones. I only hav premium kikkoman, can i use it instead of mixing dark nd lite soy sauce .

Hi Jose. Premium kikkoman is light soy sauce. It’s saltier than dark soy sauce. You can get dark soy sauce from Amazon or from your nearest Asian supermarket. The purpose of it is to give your dish a darker hue. You can choose not to add it if you don’t mind the noodles looking pale. Hope this helps. Happy cooking!
