Phil watches as Kathy's flight to Cape Town, South Africa departs. After the plane takes off with her and Ben onboard, a special theme (commonly referred to as "Kathy's theme") begins to play and leads into the closing credits. The extended credits are the longest iteration of the 1994-1999 version of the program outro.

I think this was the only time they used the full version of the 1994 theme. Actually sounds edited to make it longer

It is, only from about 1:35 though. The full 1994 theme only had one bridge, not two. At 1:35, it would of finished from where it is at 1:55.

did they use a drone to record the view of London or was it inside the Airplane because the footage does shake a little

No drones in those days, it was most likely footage taken from a helicopter, either specifically filmed for the show or from stock footage. There was no airplane, Kathy wasn't really flying over the River Thames, the actress would have just filmed those scenes on the tarmac if it was even a real plane interior.
