Today, Julianne and Annie are making homemade apple cider vinegar from our discarded apple peels and cores (also called apple scrap vinegar), and we wanted to share the recipe with all of you! This is a great way to use all the wasted parts of the apple from making applesauce or apple desserts. It's easier than you think to ferment quality vinegar, right in your own home! it may not be identical to apple cider vinegar but it has many of the same used and applications. Enjoy!

Made your apple cider vinegar, I have waited the three months but now my jars are only 2/3 rds full. Should I have sealed them or just add water?

I've been experimenting with adding "mother" to store bought regular ACV without mother and it works pretty well. I take 3/4 jar of ACV with mother and add 1/4 jar regular. Pretty soon a mother appears. I take out 1/4 for my daily use and add 1/4 regular. Every few months l add a skin from an organic apple to feed it. And repeat. My mother continues to grow and my regular ACV now has a mother. 💖🌞🌵😷

I have used the mother to start the fermenting process when I make Vinegar myself. If I add a bit of the vinegar with the mother to a new batch it helps it to speed up and I have less problems making it.

@@weRweekendwarriors , to make apple cider vinegar (ACV) you take chunks of apple skin, cores (some people even used bruised chunks of apple flesh) some water and let it ferment. Fermentation is caused by good bacteria (common folk call it the mother) which comes together in a white jelly kinda disk (called a scoby). After it's become ACV, some commercial bottlers distill the vinegar (the cheap ACV) and others just filter it (more expensive because it's healthy) and label it "with mother". Mostly it's clear, sometimes you might see a brownish settlement on the bottom of the bottle, that's the mother. If you pour this into a widemouth jar and put a lid on it (finger tight) and set it in the back of your pantry for a couple of months you'll find a white scoby. Some people always use a scoby to start a new batch, but it's not necessary. Just like sourdough starter... you can make a sourdough starter from scratch (there's enough good bacteria in the wheat and in the air), but it's way easier if you get some from a friend (and more fun). If you see other colors (green or black or pink) of stuff floating in your ACV throw it out. The bad bacteria has over run your batch. (I said to put it in a wide mouth jar because it's easier to see and poke at the scoby than when it's in a narrow necked bottle. And it's easier to feed it chunks of apple once in a while. @@weRweekendwarriors it is the bacteria/yeast that sometimes develops during the fermentation process-it’s what gives some ACV a cloudy appearance. the Mother it is the healthiest part of the vinegar ❤

Oooh great tip! I've wanted to make peach pit (and cherry pit!!) vinegar but I did not know it could be used for hair as well!!

I used to know a chap who worked on a farm that has been growing cider apples and making cider in Somerset, England (actually within sight of Glastonbury Tor) for nearly a thousand years and I asked him how they make vinegar. They use the ancient technique of leaving the lid off the barrel for a week or two after it's finished fermenting.

@@RealLifeLiz i added the scraps and a cup of sugar to a jar and filled it with water and 1/4 cup of braggs apple cider vinegar. I used the braggs because it has the mother in it that is what jump started the vinegar. It still took about 3 months to make

Also, you can feed the fermented apple leftovers to your chickens. They love them!

I used a food 5g bucket to make apple scrap vinegar last year and worked great! When it fermented and acidified to the level I wanted, I strained out the scraps and jarred it up. I especially like using in my laundry, but it’s good for all sorts of things.

Thanks for sharing I recently bought a few 5lb food grade buckets and half A bushel of apples. I'm making apple jelly from scrapes but used cores and left over scrapes to ferment 3 pints for apple cider vinegar.

There's so much I've neglect to try. One thing I did notice with my leftover peelings scraps, the wild animals didn't bother my flower beds when I fed them left over scaps food (away from the flowerbeds). I did something unusual, I talked with them and for some reason they seems to have listened. 😊

You use apple scraps, water and sugar like on here but you add a cup of apple cider. I also give mine a shot of Braggs apple cider vinegar and that kick-starts it. You can add about 2T of any homemade vinegar and that will jump start your next batch. It’s super easy. Ferments in about 30 days!

​@1MSally1965 DON'T use Braggs because they use apples that have the APEEL on them. That causes cancer. It's a coating that they spray on the apples, and no matter how much you scrub or try to wash off, the chemical from APEEL DOESN'T come off. Please STAY AWAY from BRAGGS, & ANYTHING that has a APEEL label on it!

I made Bing cherry “cherry pit” vinegar for the first time this year. I was not a fan of it. It didn’t taste much like cherries. I think it would be better with pie cherries ( sour cherries). Good luck. I hope yours turns out better than mine did.

Thank you! Your videos are so enjoyable! I'm trying to watch a few of the older ones every day to catch up; it's a hit or miss proposition just now while I'm canning everything in sight. Will this vinegar produce a "mother"? I usually use Braggs, but it's getting to expensive for my budget. I was also wondering if I can steal some of the Bragg's mother and add it to my homemade vinegar - if that will work. Thanksagain!

This isnt apple cider vinegar. This is apple scrap vinegar. I find it annoying when people use them like theyre interchangeable. They aren't.

Thank you for the link at the end which shows other ways to use apples. I can't wait to make the ACV. (I'm on the keto diet... So, I looked it up and its Keto friendly. I mention it in case anyone else wants to know.)

I'm not sure about the keto sugars. The sugars do get eaten up and processed during the fermentation so there's not much if any left when it comes to vinegar.

Trying your apple cider vinegar!! So excited to experiment with new things - especially scraps! I hate wasting food, and I don't have chickens to feed it to - but this is great!! Figured what is there to loose if I'm just throwing them away anyhow - we will see!!!!! Any suggestions on controlling fruit flies?? Between sourdough starter, fermented foods and now apple cider vinegar I seem to have lots flying around - I'm in Toronto, Ontario area - so even though it's getting cold her, flies are still around!!!

What do you do with the scraps once the vinegar is made? Is there a further use for them?

I feed them to my chickens! My last batch was one I had forgotten about, so really acidic and my chickens didn't eat very many. I'll be burying them under my blueberries which love acidic soil.

@@HeartwayFarms Absolutely. I do a lot of locally grown crab apple for my products so it will work, I just have to save some back to do this. I might do a second ferment to get the acidity up though.

I’ve tried this several times but mine always moulds. I think the peels need to be beneath the water and stir every day. Gonna try again…

I've been adding about a shot of homemade ACV + 1 or 2 tsp raw honey to a can of sparkling water in place of soda. I'm working on breaking my soda habit and I really enjoy it! I dissolve the honey in the ACV first then add the sparkling water.

The longer you let it sit the more vinegar(ish) it will become until a point when all sugars are consumed by the mother that is developed. Blessings and enjoy!

Depending on your space, it doesn't really matter. A Large crock, small jars, a barrel it just depends on how much you need/want to make and how much apple scraps you have.

I don't often eat apples so could I freeze the scraps until I have enough to make a batch or would freezing change the sugars in the fruit to not ferment?

We have never Froze them first. We always just made it when we have it available. Freezing it definitely might change the availability of the different natural enzymes and yeast.

It will keep indefinitely due to the low pH. Keep covered to prevent bugs and dirt. After several years it might taste "stale" .. but honestly it'll be gone long before then in a proper kitchen.

@@user-uz8sn1qv8y If I had to interpret Past Jeremiah, I guess I meant climate control -- temperature 60-80 degrees F, humidity below 60%, no rodent/insect infestations... as well as rotating your supplies properly (use the old stuff first; products are accessible and not buried, etc).

We use the cloth to let it breathe but keep bugs out. You have to let it breathe while still keeping the bugs out :)

I added a shot of ACV to the initial mixture. Is that okay? It was muscle memory that kicked in with Kombucha and how I make that, but don't want to throw away the few gallons I mixed up if this is okay.

These are half gallon jars and yes, if you are using quart jars, you can use less sugar.

Do you remove the seeds from the apple cores? I've heard the seeds can be toxic, however I've not done a ton of research on that. Thank you!

Never. I just read that finally, there is knowledge that the cores and the seeds contain some really beneficial probiotics. Personally, I've always eaten them, and love the taste of the seeds. Only recently did I decide to save the cores for making my own ACV. You'd have to eat an awful lot to be toxic the way we were always told they were. In small amounts, they are good.

When you say, “bottle it up” do you need to sterilize everything and can them? Or just simply put the strained juice in a jar and put on the shelf? What is the shelf life?

Not sure if you will respond in time but is it ok to use the wasted apple chunks with worm holes and such. Or does that mess with the clean fermentation

We make our Apple scrap vinegar with most anything that's not turned into mush. You might want to cut away something that's completely junk but we have always used the scraps and discards. Enjoy :-)

Can I do this with apples from the ground, (pretty decent ones though), and with regular bottled water, and with regular sugar, and in a plastic water jug? Would it still be okay if I don't use filtered water, and cane sugar and not glass? I have the apples today but not the other things, if they are necessary. Any advice would be greatly appreciated. Thank you.

Any water with fluoride will kill the natural bacteria and yeast that is needed for fermentation. Glass is good for seeing what is happening, since ACV gets pretty acidic over time.

@@lycorispeony1274 Thanks for answering. I decided against it, since I couldn't get a glass jug. But I did do a batch in mason jars. They are definitely fermenting. Maybe too much/ too fast, even. They smell and seem vinegar-ish already, after about the third week. The pieces of apple still float and so the top layer is always exposed to the air, and browning, etc. I stir (almost) every day.- missed a couple. Still working on it. Hopefully wb ok. Hi ladies, love your video. My wife and I are trying to make vinegar and I messed up. It has been bubbling for nearly a month and has stopped, I should have gone back and watched your vid again, but, I have some cognative issues and never though about it... anyway, I strained the "Viinigar", then thought. "maybe I was suppose to let it sit first", I went back and rewatched this vid and realized I was wrong.. I put it back in the jar and it is not doing anything.. have I destroyed it by introducing oxygen into it? can I revive it with a spoon of sugar? what should I do. Hey! Thank you for reaching out. Honestly, it's kind of tough to determine the status of your vinegar without seeing it in person. But after hearing about where you are at in the process we think you should first give it a taste and see if it tastes like vinegar. If it already tastes like a weak vinegar, go ahead and put it back in the jar and let it ferment for a bit longer. Our vinegar is still sitting in jars with the fruit (with a breathable top, and have developed a mother, or scody, on top. I'm going to taste and strain them soon. You can introduce sugar/fruit again if all else fails to try and start up again. Hope this helps.

Use apple cider instead of sugar & water. Honey can inhibit the bacteria as it has natural antibiotic properties, so not recommended.
