You can use this Easy Homemade Fermented Mustard on a sandwich, a hot dog, a corn dog, or use it when making your favorite french vinaigrette recipe.
In this video I show you how to make 3 tasty varieties - a basic yellow mustard, a stone ground mustard, and a honey mustard. All are lacto-fermented making them rich in probiotics, which are great for good gut health! But that's only the beginning. Use your imagination to come up with all different types of blends. Homemade fermented mustards also make great gifts, and since they're lacto-fermented, the probiotics are an extra added bonus!

I absolutely love your channel. You've got me making things I never dreamed I'd make, like bone broth, yogurt, etc. Now, I get to make my own mustards. I always had to buy yellow mustard for my husband and stoneground for myself. You've made it easy for me to make any mustard I want. Thanks so much for your lessons. Thank you for this Video, so I`m living in City of Hamburg/Northern Germany,the recipe is 101 this was my grand ma shows long time ago. But she used mustardseed, cracked them like you did it. Fermented with Water from Sauerkraut, but the secret are the spices...... Bayleaf, Pepper, coriander seed, and about 10% fine milled sweet almonds for a round up.

@@sylwiavaclavekphotography - Since you're using a small amount, it really doesn't have a major flavor impact. When I have tried it with kombucha, I have used the lemon ginger type that I bought at the store. I didn't notice any flavor. I have also used my plain water kefir that works great. As it ferments, you'll notice "foam" more so than bubbling - and sometimes, you'll just notice a bit of liquid pooling on top. Either way is fine and in warmer weather you'll want to get it into the fridge within a few days. Keep me posted. Love, Mary

All sound delicious to me, but stone ground would be my pick. Lee would likely prefer the basic yellow one and Daniel would love the honey one. His favorite though is honey barbecue.

Great Video Mary.. I am going to get crackin' at one of them for now.. I think the second one you made w/ the pounded seeds in it, I would like thinner as the dry seeds would soak up the liquid..while fermenting. I do love yellow mustard as well, as I love to make onion mustard buns.. Actually, all three looked fun to make.. and yummy.. This was a fun video.. Thank you for sharing :)

You just intrigue me so much. I love mustard way more than ketchup. Does the stone ground one taste like djion? How would I adjust to get it to taste like that? It's my favorite. I use it on my fish😋

Hi there,,,I have a quick question. The only whey that I have is in powdered form. I use this as a protein source which I mix in whenever I prepare a smoothie. Can this form of whey be used in this fermentation process? If yes, do I need to mix it with a liquid?

I can't use whey or kombucha as caffeine is banned from my diet and trying to avoid dairy right now. I'm thinking I could use my homemade vinegar.

Edie Boudreau - Hi Edie, Vinegar may work but I’m not 100% sure because that’s an acetobacter not a lactobacillus. Ferments are generally fermented by lactobacillus. However, you can just use salt… The whey, and or things like kombucha, are just helpers. You can just use a little extra salt and it should work. You can also use some liquid from an a previous fragment. Let me know how it turns out. Love, Mary❤️😘❤️

Okay adding fermented mustard to my list now. Question since the Honey mustard is fermented does it eat part of the sugars in the honey? My mothers a diabetic so I dont allow any sugars.

I would suspect that it would last at least a year but if you bought the mustard seeds instead (and then ground them when you needed them), the seeds would last almost indefinitely. @@MarysNest Hi, I enjoyed it, Though it turned out to salty. Does it suppose to turn out too salty? Here is a nice story : I added alittle bit of water, to the point it got to watery.. I was making Sauerkraut, jarred. But I was left with some cabbage left over that did not fit into the jar. So, I added it to the mustad jar. It's like 20% mustard, and the rest is the cabbage.

Miss Mary, we need to talk about sea salt. Sadly, it's now very contaminated with micro plastics. We now use the Himalayan pink salt, kosher salt, and regular pickling salt. The processes don't have so many vitamins but they also don't ha e so many microscopic pieces of plastic for our gut lining to deal with.

I have vegan friends, so I'd like to use brine from other ferments that I have in my 'fridge (cucumbers, onions, sauerkraut, jalapenos) rather than whey. Does that sounds to you like it would work? Would I substitute 1:1 for the whey? Or will I need to tinker with that?

Have you ever had the opportunity to use The Oats, Peas, Beans & Barley Cookbook by Edyth Young Cottrell? Her approach is also nutrient dense and faith based, but with a plant-based focus. The book is originally from at least as far back as the early seventies, but is widely available both new & used.

Mary Interesting thing in the grocery stores as of late: Gourmet Mustards showing up in the Mustard section! One notable company is Dietz & Mallie ..they have every flavor of mustard you can imagine, including cranberry! I'm betting there's a couple of great "mustard video's in there somewhere?.. About the time in a refrigerator: Here is a list of the ingredients of Mallie's Mustard, and I'm pretty sure once opened you can leave it the refridge a good long while..I don't see any stabilizers in the list. WATER, MUSTARD SEED, SPIRIT VINEGAR, CHABLIS WHITE WINE, SALT, SUGAR, LEMON JUICE CONCENTRATE, DRIED MOREL MUSHROOM, DRIED SHALLOT, POTASSIUM METABISULFITE AND POTASSIUM BISULFITE (USED TO PROTECT QUALITY), CITRIC ACID, ONION JUICE CONCENTRATE, XANTHAN GUM, GUAR GUM, NATURAL FLAVOR (COCONUT). It' seriously not just about yellow or brown mustard anymore. Excellent Video - Thank you

i dont know what happened i made the honey mustard and it was terrible i threw it out, i dont know what i did wrong, i didnt have mustard powder so i grind the mustard seeds and took it from there, was that what i did wrong?? help i love honey mustard and i wanted this to work out so bad lol also can i use black mustard seeds

@@MarysNest i dont know it smelled really bad and i cant even tell you what it tasted like it was horrible no mustard or honey taste i forget i threw it out but it was terrible , i did your fermented ketchup and its great maybe i will try the mustard again being i love honey mustard with my pretzel lol maybe the seeds were old. i just bought new black mustard seeds can i try that?

v nickcolvin - That is a good question. It really will depend on how much you make. I would estimate that a few teaspoons or tablespoons of ingredients would add up to less than 10 cents per the amounts I made. Hope this helps. Love, Mary
