Hi, everyone :) Today we’re going to show you how to make Japanese-style hamburger Steak (Hambagu).
Japanese Hamburger Steak, also called Hambagu (ハンバーグ), which is a popular dish in japan, usually served with rice. It’s a western style food like Tonkatsu, you can enjoy it in Yoshoku (Western-style Japanese food) restaurants, too.
Being a home dish, means it’s very easy to make. Hambagu is typically made from both ground beef and ground pork, served with worcestershire red wine sauce, it tastes flavorful and amazing juicy. You can also put some grated daikon radish on top to enjoy a different flavor. Feel hungry? Hope you enjoy this recipe. :-)

Japanese-style Hamburg Steak. (Hambagu ハンバーグ)
Ingredients
☞ For Patties
ground beef 100g
ground pork 100g
onion a half
egg 1
salt 1 tsp
ground black pepper 1 tsp
breadcrumbs 15g
milk 24g
☞ for Sauce
worcestershire sauce 34g
ketchup 55g
red wine 70ml
water 50ml
sugar 1 tbsp
mustard 1tsp

Instructions
1. Finely chop the onion. Divide chopped onion into ⅔ and ⅓ .
2. Pour olive oil on medium heat, add 2/3 chopped onion, cook until browned. Transfer to a bowl and let it cool.
3. Mix the breadcrumbs with the milk.
4. Combine the ground beef and pork, breadcrumbs, salt and black pepper, mix well with your hands.
5. Add fried onion, fresh onion and a egg, mix until the mixture gets a little bit sticky.
6. Rub your hands with oil to prevent meat sticking. Divide the mixture into 2. Take it onto your hand like catching a ball repeatedly to remove air inside, and make into a oval shape.
7. In a fry pan, pour olive oil and place the patties on the pan. Gently press and make an Indent in the center of each patty.
8. Cook each hamburg on medium heat for 5 minutes until golden brown.
9. Flip and cook for 1.5 minutes, then pour red wine and and water, reduce the heat to medium low, cover with the lid and steam for 6~8 minutes.
10. Time up, stick a toothpick and translucent juice come out. The hamburg is down.
11. Remove the lid and add Worcestershire sauce, ketchup, mustard and sugar, mix quickly over low heat.
12. When the sauce thickens, pour the sauce over the hamburger steaks. Serve the hamburger steak with grated daikon and scallion shreds on top.
📌 How to make spring onion curls for garnish?
Just cut the green onions into sections and slice then lengthwise very thinly, place in the bowl of iced water for minutes, the green onion will curl up. Then dry with paper towel. It's down. 😊

I’ve tried this recipe. But since I didn’t have red wine, i used cooking wine instead. It’s still amazing. I also added mozzarella cheese inside and it was divine!! Omg thank you.

Eating this whilst I write this comment. Really great dish! I've made it for my family 3 times, my 2yr old loves it! After seeing hamburg steaks in manga so much I had to try and I'm so glad it was this recipe. Note: I get 5 patties with 1lb each of pork and chuck. Kudos!

I remember the first time I ever ate a Hamburg steak and it was absolutely delicious. It was December and I went on vacation in Hokkaido and I remember the exact order, a Hamburg steak with one big bowl of rice and a watermelon soda

i made this just now, sooooo deliciousss. i didnt have a few ingredients tho so i made it with out onion but i put onion powder for the flavor, and i didnt habe the wine and i forgot the mustard in rhe sauce and i only had ground beef no pork but it still turned out super delicious. thank you!

Hi there, that is daikon oroshi =grated daikon Grated daikon is used in many Japanese dishes, like tempura sauce, or mixed into other dishes. 😊

Hello there, that is grated daikon radish. As the onion, 2/3 should be fried until brown, and 1/3 onion is raw, so we have two flavors of onions. 😊

Hello,那個裝紅酒的小杯子是法國 Duralex 的小尺寸,是強化玻璃,我們小時候這種杯型有流行過一次,後來就少見,前幾年在日本的50元雜貨商店巧遇就趕緊買幾個回家懷念一下,國外很多CAFE會用這種杯子來裝熱拿鐵,露X莎的澳洲小拿鐵好像就是用它們家的杯子來裝,網路上有看到有店家半打半打的賣,可以搜尋看看^^

hi there. just wanna ask something about salt cause some chef says that it will ruin the meat if mixed. as i saw they form the patties then sprinkle some salt then put in pan. tnx nice vid

Hi Mandu, as I know, many chef will put the meat in salt water, it can make the texture more tender, but seasoning meats with dry salt rub draws out protein-rich juice that dries on the surface during cooking, creating a crisp, deeply seasoned crust. Also, it depends on how much salt you add in. 😊

Very lovely video. I always thought Japanese Hamburg was just a regular burger patty without the bread and toppings. This is pretty much how I make meatloaf when I'm just making individual servings. Otherwise, I'd just bake it all in a bread pan and baste it in the sauce.

Hi there, it's very easy. Slightly flatten the green part, then fold it into a length of 7~8cm, then cut into shreds along the grain, soak the shredded green onion in cold water for a few minutes, it will curl naturally. 😊
