How to make delicious Japanese Hamburger Steak (Hambagu). Step by step guide.

Hi everyone. Thank you for coming back to my kitchen. Today's dish is Japanese hamburger steak. We call it Hambagu in Japanese. This is a Western dish we (Japanese) arranged in a Japanese way. Hambagu is one of the most beloved Western-style dishes in Japan. And, I grew up eating it quite often. I'll leave all the ingredients and cooking instructions below. I hope you'll enjoy this recipe. Have fun in the kitchen! 😊
Ingredients for Hamburger Steak (Portion for 2 or 3)
: Ground Beef and Pork blend (300~350 grams)
: Onion (half)
: Panko Bread Crumbs (25 grams)
: Milk (3 Tbsp)
: Egg (1large)
: Salt (1tsp)
: Black Pepper (1tsp)
: Nutmeg (1/2tsp) Optional
Ingredients for Sauce
: Red wine (3Tbsp) You can substitute it with White wine or Sake.
: Ketchup (3Tbsp)
: Worcestershire Sauce (3Tbsp)
: Butter (20 grams)
Cooking Instructions 1 ( how to make hamburger patties)
1) Chop half the onion finely.
2) Sauté the chopped onion until brown.
(3 minutes on medium-low heat, then 5 more minutes over low heat.)
3) Cool down the sautéed onion thoroughly.
4) Knead the ground meat thoroughly with salt only first. Knead until sticky.
5) Add milk to Panko and mix. Once the panko is moistened evenly, add it to the ground meat.
6) Beat the egg well. Then, add it to the ground meat.
7) Add sautéed onion ( make sure it's cold ), Black Pepper, and Nutmeg to the ground meat.
8) Mix them all together until the mixture becomes sticky again.
9) Divide in half and make 2 meatballs. If for 3 people, you can make 3 meatballs.
10) Through the meatball from one hand to the other 20 times. It'll remove the air bubbles from the
mixture. Then, shape it into a round patty. After the patties are done, cover them with plastic wrap
and refrigerate them for 30 minutes.
Cooking Instructions 2 ( how to cook hamburger patties)
1) Place the patties on a non-stick frying pan. If you don't have a non-stick frying pan, add a
little bit of cooking oil and place the patties over it. Then turn on the heat to Medium- low
and cook them for 3 minutes to sear the bottom side of the patties.
2) Flip the patties over and cook for another 3 minutes to sear the other side of the patties.
3) Flip the patties again. Then, lower the heat to LOW, add 3 tablespoons of water, put a lid
on, and steam the patties for 5 minutes. And it's ready.
4) Move your hamburger steaks to serving plates and cover them with aluminum foil to keep
them warm.
Cooking Instructions 3 ( how to make sauce )
1) We'll use the same pan. Add Red wine to the pan. Turn on the heat to medium-low. Then,
scrape off the flavorful bits stick to the bottom of the pan.
2) Once the Red wine starts boiling, add Ketchup, Worcestershire Sauce, and Butter to the pan.
Then give it a mix and continue stirring until the sauce thickens.
3) Pour the sauce over the hamburger steak and it's done.

I must say this video made me smile alot, mainly for the memories of my german grandmother teaching me to make frikadellen. The only differance really is the spices used. for 454g of pork/beef mince, 1 teaspoon prepared yellow mustard, 1 teaspoon dried marjoram, 1 teaspoon sweet Hungarian paprika, 1/2 teaspoon ground ginger, 1/4 teaspoon ground mace, 1/4 teaspoon ground coriander, 1/8 teaspoon ground cardamom, 1 clove garlic , minced, 1/4 cup chopped fresh parsley if you want to try the german version from Hamburg germany. Every family has there own version but we all share the same basic herbs and spices with tweaks to the amounts and additions that lead to arguements at family get togethers of who's is the best. We will be trying your recipes as you make it as well as Oma's recipe and let the kids decide. Tale care, God bless one and all.

In huge parts this is the recipe for what we call "Frikadellen" in germany 🙃 super delisious, and is a relatively cheap dish. You could use dry breadrolls instead of the panko, just rehydrate them in water, squeeze the water out after a few minutes and add to the meat. Goes really well with mashed potatoes, caramelized onion and gravy❤

May i ask, do you grind the beef and pork yourself? Or are they available ground at the store in Japan? I've never been to Japan and would like to know because my wife is a bit spoiled here in the u.s. Thanks...

Ground meat is available at supermarkets in Japan. I've lived in both countries, and I can say that Japanese people are a lot more spoiled than your wife. Supermarkets here sell many varieties of meat, and those are usually pre-cut or pre-sliced for your cooking needs. I sometimes miss bulky American style meat.. 😢

A bit question. Red wine (and any kind of wine) are not common ingredient around my region. Is it possible to using another thing to replace red wine if i can't just skip it to make the sauce?

My husband and I eat hamburgers, with no bun almost every night for dinner, can I prepare the hamburgers a couple of hours before my husband gets home and then cook them like you do, or is it important to let them sit in the fridge for 30 minutes exactly? Thank you so much chef.
