I trust you are well and having a special time this week with your loved ones, or even by yourself. With Easter (or Resurrection Sunday) just round the corner, perhaps some sweet indulgence may complete your feast! This Milk cake is easy and excellent giving you a delicious and soft cake which is moist. It’s, well, milky in flavour but otherwise quite similar to a butter cake. But it’s wow in every way!

Ingredients:
1 US Cup = 240 ml
150 grams Salted Butter, at room temperature
120 grams Sugar, powdered
3 Whole Eggs, at room temperature
1/2 teaspoon Vanilla Essence
2 pinches of Salt (makes a difference)
100 grams Maida (all-purpose flour)
50 grams Milk Powder
1/2 teaspoon Baking Powder
50 ml Milk, at room temperature
Icing Sugar (optional)
Bake in a preheated oven for 45 minutes at 150 degrees Celsius on the middle rack.
After baking, let it remain inside the oven for 10 minutes, and then bring it out and let it cool. Remove from the mould when it completely cools down.
* I kept the remainder stored in the cake tin, inside the oven. Take it out for for a little time each day to ‘air’ it. It is too tasty, but for trial sake I checked and the cake remains good for 2 weeks (and even more, but then it got over). But over time, it can dry out depending on weather conditions.
