I've tried placing the farm-fresh eggs (room temperature) into rapidly boiling water. (A technique prescribed as the best by America's Test Kitchens, if I recall correctly.) The results were not consistent... better than any other method I'd tried before, though. I will be trying your method as soon as I have acquired the hardware.

Yes, I've never had good results with that, either. Steaming is the only method that's been consistent for me!

Personally I tried every gimmick people said to try.Salt,Vinegar,Baking soda,dif methods NONE ever worked .Then I tried this and wallah success awesome.THANK this lady so much after years of trying.

I've tried many " perfect every time" methods, and tho many worked some of the time, I've never had any that worked EVERY TIME! Nothing has ever been CONSISTENT! So my pet peeve is when someone tries a method once, and it works, so they go back and give a review or recommendation that "this is the perfect method. It works". Drives me nuts! I think the one that has worked best, and most often for me, is baking the eggs. Seems similar reasoning for the success. But even with it, sometimes it works great, and sometimes it's a failure, or half the eggs will come out great, and the other half a mess. Haven't had a chance to try this method yet. By the way, what setting do you put your instant pot on? I don't have one yet, but that is on my wish list for someday. If you said it in your video, I missed it. You said set it for 4 minutes actual cook time, but I didn't hear a setting. Thanks! Also, I love your blog, and website!! You live up the highway from me (several miles, but next town up). We've chatted by email before a long time ago.

@Greg W Thanks. Tho I've found a few methods that sometimes work, I've yet to find one that worked perfectly every time. I've even had batches using a method that works most of the time, that has had some eggs in the batch come out perfect, and some be disasters. One thing that has been a constant in my good results was an ice water bath as soon as the eggs were done. But even that never seems to insure success. Best I've done so far has been baking them, but I haven't seemed to have perfected that yet either.

I started doing mine steamed after I read your blog. It works. Every time. One tip though, I found that if I put the eggs in before the water was boiling, the yolk would settle to one side. That, of course, made me a little crazy when trying to do pretty perfect deviled eggs. Simple fix! I just get the water boiling first and then set the steamer basket on the pot. The heat starts to set the white right away and the yolks come out perfectly centered.

interesting. that may be the reason that gets me steaming eggs. I haven't had problems peeling even fresh ones, I do that little roll on the counter that you see Jill do in the video after smacking the fat end (air pocket) first and never have any give me trouble. But the yolks do settle and I couldn't figure why they would...and now I'm thinking about it, for hatching that is the exact reason they need turning several times a day.

I'm so excited to know about this method!!! I'm positive it will work bc of the remarks. Yay!!! Will try it right now...******Tried it and it worked beautifully. I boiled the water with the steamer already in the pot so it got hot, too. This was a suggestion I read on the comments here to put the eggs in already steaming water. Yolks were well centered and not off to the side. I'm so happy to know about this! Thank you so much to both of you for your instructions. It's kind of like trying to fold a fitted sheet for the first time and getting so frustrated until you learn the trick. Now I don't need to keep trying all these new methods that don't work! AMAZING!!! Thank you, again!

How timely this video is!! Just yesterday when my chickens started laying again, I decided to boil some. After six eggs, I didn’t get one smooth one. Now I know! Edited to add: I gave up hard boiled eggs even with having chickens because for the last 10 years, I could never get them right. I tried this tonight, and I’m so pleased to say, it worked!!

Worked very well. I roughly followed this method with 30 eggs that were purchased from a store the previous day. All eggs, except one, peeled like a dream.

We live in Michigan and have 3 Rhode Island reds hens...I can't tell you just how much you have changed our lives about boiled eggs...fresh eggs! We have been fighting peeling those fresh eggs...and so much waste sticking to the shells....until we tried your advice! WOW! Thank you so much! We have RIRs as well, and their eggs will never peel no matter how hard I try and what techniques I try. My ameraucanas and Australorp do great, but never the rirs. Trying this right now LOL

I looked at several methods on various websites and KZfaq and decided to try this one first. I did have to be fairly careful and took it slow, but I'm happy to report that 11 out of 12 eggs peeled smoothly, but that one just refused! I may try other methods I saw, but I was very pleased to have this much success.

Sorry. I tried again and this time only 5 out of 18 very fresh eggs peeled smoothly. Maybe I need to make sure I have week-old eggs. Or try another method.

This method is amazing! Thank you so much. I started eating organic eggs about 2 years ago and was never able to peal them without making gouges in the eggs. Today, I have perfectly cooked and pealed eggs. You are a blessing!

I've used this method since you first talked about it. It works every time! My husband brings deviled eggs to every family event and I never have to make any extra eggs in fear that half the white comes off with the shell. I am so thankful that you told us about this method. Works Great! I wasted a dozen eggs doing it according to another online video that didn't work. I even called my Mother who is an amazing cook and she told me I needed to use older eggs and boil in salt water. I have sent her this video for her to use next time. Thanks again! You saved me a lot of frustration!!

I am currently in the process of using this method for hard “boiling” almost 7 dozen eggs. I have cooked 2 dozen so far and they were the easiest eggs I have EVER peeled. I will only use this method now. Thank you so much for sharing it with us all. I would never have thought of steaming them.

This is the second steam video and I tried it today and it worked perfectly. I did it a little different I put it on medium high got it boiling turned it to medium cooked it for 18 minutes put it under cold water , and they peeled so easy maybe 30 seconds or so . Great idea plus the yoke was perfectly cooked . Since I only use pasture raised eggs this is a life saver

I also have been doing this for quite a while. Love it! I cook at a dozen every week and put in the refrigerator for use. I just let them in my steamer basket set on a plate and that works well for me. Thanks for that tip long ago!

just went out to the coop and gathered a dozen eggs so fresh some were still warm, tried the steam method and it worked great thank you.

Finally! Somebody who really knows about eggs! I watched all the "how to peel an egg" videos and somehow I knew they were not getting same eggs I was getting. I haven't used my double boiler for years until now. Eighteen minutes seemed to be about the minimum cooking time, for me. A funny story: when I was about 4 or 5 years old it was my turn to go get eggs from our chicken house. Those hens figured me out right away - a timid little kid trying to collect eggs. They pecked at my hands and I went back without eggs and told Mom. She still needed eggs, so I had to go back out. Suddenly, the hen house seemed to get real quiet. I turned and saw Dad standing in the doorway. He didn't have much patience for the situation. He grabbed one hen by the neck and threw her off the nest, and then another one. Then he waved his hands at the others and they scattered. That day, I learned a lot from the old man - how to handle myself in the hen house. I never did see the rooster when I was in the coop. He was always out of sight. He seemed to know the score - the real pecking order. The hens and I were just a little slower to figure it out.

Loved your story. I remember the first time i picked eggs. I lived on a small farm with my little kids. Very slowly snuck my hand under the chicken while takking softly, i got the eggs by feeling for them. My little boy and girl learned it, too.

Hello, I tried your method for hard "boiled" eggs today and all I can say is YOU'RE THE BEST!! I don't have chickens so I was just using organic eggs purchased at Costco, but the shells just fell right off of them. I have tried the ice bath method that is usually promoted and wasn't thrilled with the results. Thank you so much, you have saved me a lot of time and a lot of wasted ice. Your method is EGGCELLENT! I am so glad I found this video! I’ve tried everything you mentioned to no avail. I had to test it so I just did 4 fresh eggs and the peels slipped right off. I had given up on deviled eggs during the holidays because they were so frustrating and time consuming. Yay! Deviled eggs are back on the menu now. So excited 😊

Jill, my wife and I run a bed and breakfast outside Yellowstone. We have struggled with easy peel eggs for our guests when they desire to take a 'to go' breakfast into the park to catch the sun rise in the Lamar Valley. Your instructions are a godsend. Thank you. My method: Cover eggs in cold water, add 1 teaspoon baking soda. Bring to a rapid boil, take off the heat and cover. Time 17 minutes, remove eggs and plunge in a bowl of ice water with ice cubes for 2 minutes. Voila! Peel starting at the fat end, the air pocket. Timing is important so stay in the kitchen. The baking soda extracts the liquid. I use this method even day-old eggs. I tried your method of steaming and it is great too. It is nice to have options. Thanks.

Hello from Canada. Just tried this steaming method and will give you 5/5 stars. We did 16 eggs from our coop (between 1 - 3 days old) and they came out perfect - the shells came off super easy. Thank you for this..

I know, it's only been an hour from my last post...but...using our rice steamer for about 20 minutes and BINGO...eggs peeled very easy! We get most of our eggs from a guy in town that has laying hens, very fresh eggs and the steaming method worked fine...THANK YOU...!!!

I am terrible at boiled eggs. I tried your method. I was amazed. I also realize that your technique of cracking and rolling before peeling is equally important. Awsome job. That you for being able to enjoy boiled (steamed) eggs. I used my farberware steamer insert pot. Came out awsome. Thank you very much

Another man had these instructions, and I used it on my grocery store eggs. This is the secret! I used my French fry basket as a colander. The shells just slid right off!

Just made deviled eggs for christmas this method works perfectly and the eggs actually taste better! I did boil the water before putting eggs in since i wanted the yolk to be in the middle. Ive struggled for years with boiled eggs to the point of giving up on making them...thank u so much for this video!!

WOW Thank you for teaching this homemaker of 47 yrs a new trick . I do peel only top and bottom and then blowing into smaller end to eject the egg. Fewer pieces of shell and works everytime. Thanks again, wonderful first time view. experience.

Tried this after seeing this on your blog...my husband and I were so excited! He loves to make deviled eggs when we go to a gathering and he hadn't made any since our chickens started laying last summer. Mmmm...hard cooked eggs!!

This is a fantastic method; the only method that works for me and this solved egg problems I have had for YEARS. Amazingly the egg shell peel after steaming just falls off; thank you a bunch!!!!

I've been using a steamer to do this for about 12 years now, great way to do eggs. I even do a few soft boiled eggs also, I use Rival steamer any of the other work well also, and thrift stores are full of them, Enjoyed you video and Thanks telling these folks.

Thanks.. I had issues and ended up peeling them in a bowl of water. That really helped to peel and to keep off any small shell fragments especially for kids.

Yes! I use this method in my instant pot and it works! It’s the only way I “boil” eggs now and I don’t have to watch a pot to make sure it doesn’t boil over.

Soft boil= 6 min in boiling water, then instant ice water immersion

Good advice. Very good advice. I have found that steaming eggs makes it very easy to peel them afterwards. Learned about it on a separate youtube channel. No cracked eggs so far.

Okay, I watched the vid and pulled out my pot and put the steamer rack in and put the eggs in and OH MY GOSH!!!!!! It worked!!!! Dang, how old am I? I can't believe it. My other friend goes through three or four things and she comes up with perfect eggs. I called her and told her to come over. She's on her way! LOL, she will be so surprised! What you learn, gives you a chance to share with others and I will definitely share with her and others. Thank you sweetie - I am smiling big time...no more ugly eggs!!!! THANK YOU for this! Me eggs peeled beautifully! I live at 3,400 feet of altitude where it usually takes longer for eggs to cook so I went with your suggestion of 20 minutes. I timed my eggs carefully then took them off and put them in cold water immediately. I found that the yolks were slightly overcooked and grey around the edges. Next time, I'll try 18 minutes and decrease by 1 minute after that until I get them perfect.

This is amazing. What a great way to cook eggs. I just steamed a dozen eggs and the shells just fell off. I do t think I've ever peeled a dozen eggs without at least a couple of very loud expletive filled outbursts 😀 Now that is a thing of the past.

I found this on your blog page and have been using this technique every since! The only difference is I bring water to a boil then add the eggs and basket. I am going to try this before the boil and compare!

Just did it the 2nd time. 18 large eggs from the grocer....just bought. Worked perfectly. We have a winner folks. No other way to say it.

I use my (not instapot brand) digital pressure cooker set on steam and it works the same way. Love your egg bowl!

Yep! I couldn't believe how well it worked the first time I tried it in a pressure cooker. Who woulda thought?! ;) that is my favorite bowl, btw-- an antique store find!

I now use an instapot and use the steam feature. I also do the 20 minutes thing, they turn out great and less power used. Thanks for sharing.

Wow!! It works perfectly!! I used to wait til my fresh eggs were old and that still didn't work. Gnarly whites and yolks sticking out the end. Not good for pickled eggs and unattractive for deviled eggs. This is great!! Thank you so much for sharing this tip!!
