I'm from Hong Kong so it may be slightly different, but the 燒賣/siumai wrappers are traditionally that yellow colour not only because of the yolks, but because of the 鹼水 ("kansui") that's in it, which is basically a solution from potassium carbonate and sodium bicarbonate (aka baking soda) and it's also what makes it have a slightly bouncy/springy/chewy texture. also, Chiu Chow is the place in China, the sauce is usually referred to as "潮州辣椒醬" ("Chiu Chow chilli oil") rather than just "Chiu Chow". and in Hong Kong, it's pronounced like "see-w maai" in Cantonese, but in China, it's pronounced like "shāo mài" 🤷🏻♀️

Another difference of the chinese shu mai: chinese people demand slash require that any dumpling or shu mai filling should be mixed only in one direction. Yes, demand slash require is the word. 😅 P.S. for some reason, I felt proud seeing erwann using an ordinary kawali in doing the chili garlic oil. 😉
