Here in the south Texans think they the best when it comes to the barbeque wars but Memphis, Carolinas, Bama and Georgia will all have something to say about that. Some of the best barbeque in the world in these places.

California BBQ (regardless to what style you use) typically requires you to use California wood (Almond or Plum), but I had forgotten about Avocado, so good on you!

Damn, I keep watching all these videos on here and now I'm starving and craving BBQ.. This was a good one tho, I wish I lived there, I would definitely go eat her food.. And I will try mixing in cabbage next time I make collard greens cuz that looked so good. She was very well spoken and clearly has a lot of love for what she does. That's when you know whatever they make will be the best because they're not just putting out whatever just to make a buck. Quality and heart.

Love this. She makes a good point about not being bound by tradition in California. Same reason that NYC is probably the best single city for BBQ in America for my money. So many places in Texas and NC and Kansas City and Memphis have to make the local version of BBQ and not do anything else. And I'm born and raised outside of Raleigh.

Another advantage that we have in California is our wood selection. Over 13 types of Oak, with Red Oak being the traditional wood for Santa Maria Tri•Tip. From stone fruit we have peach, cherry, plum,apricot …. tree fruit we have apple,mulberry, orange, fig & from Nut Trees we have pecan, walnut, almond (most popular) & the EXCLUSIVE use of pistachio. Finally the best wood in the country, coming from the far NE county of Modoc is the amazing MOUNTAIN MAHOGANY. Excellent segment, LONG LIVE THE BEAR FLAG REPUBLIC & THE TRUTH OF BBQ EDIT: this is not a total list of California BBQ woods. Just a primer

@@pavelow235 ….. Well …. I’m a traditionalist. If folks want to use a pellet pooper, that’s fine. I’m more along the lines of procuring local woods & work within your environment EDIT: Pecan is awesome. I prefer Almond as it burns cleaner & leaves little ash.My favorite is Pistachio. So clean& versatile

I love this, but she just said "when any meat falls apart its overcooked it " Umm.... I understand keeping the flavor in and wanting to keep the fat.... but that's not overcooked... Maybe just how she BBQs... Either way I tip my hat off, I love watching these videos gives me different ways to try smoking and seasoning my meats when I BBQ.

25 years ago, she's a casual, confident, with it back yard smoker. You'd hire her for all the big big yard parties. Bikers would have her on speed dial. Today? That same talent is a master chef who should probably, being honest, have Michelin reputation and run a multi million dollar fancy restaurant. We've fallen a long way! (Not that it reflects negatively on her.)
