@M LA Tuna of that size costs several thousand dollars on the inexpensive end. They have been known to sell for a hundred thousand or more. It takes a long time to get the cuts right to maximize yield and minimize damage.

I feel like a sushi kitchen is very different from a frying kitchen. Sushi kitchens are always calm and detail oriented.

I love the awareness he gives to his customers. Bluefin are a very vulnerable species because of how prized they are so it’s amazing how he makes people aware of the importance of eating all the parts rather than just the popular cuts.

He's such a soft person with a kind soul, it's almost healing how comforting he is just talking about what he loves. So I'd feel full walking out of his restaurant. Hope it survives this covid economic disaster tho.

Not only is this a great video, but if you take yourself back to where and how he started and look at where he is now.. the way he speaks of his knowledge and his passion speaks major volumes. He doesn't care how much money he makes. His love for himself, his restaurant, his staff, his family and his customers is something that should be implemented in every day lives. Having a great attitude and humbled understanding of the world and humankind can take you anywhere you want to go. What a gangster.

using different rice vinegar for different cuts of meat is actually pretty smart and not something I even would have thought of. Usually you just season the rice and don't even think about any sort of variation. It's just rice vinegar. But that takes it to a new level. I'm glad I learned that.

I haven’t seen an ad in a few years. My phone has KZfaq on about 12 hours a day, having ads would waste an hour or two a day.. Having premium is worth saving 30-60 hours a month for me.

Although it looks delicious I rather not buy bluefin tuna since it's been in major population decline from overfishing and illegal fishing. Most of the demand comes from high end sushi restaurants.
