Parmesan doesn't have "salt crystals" in them - it's binded amino acides from the protein in the cheese. That's the case for most aged hard cheeses having crunchy crystal bits.

They are called tyrosine crystals. Cheeses with more age have even more crystals in them.

I recently became a Jollybean and have pretty much watched all the videos on the Channel dating back to 2017... just a few more left to watch... I lost my dad a couple years ago and watching Ollie and his dad have these experiences gives me so much joy. Jealous I don’t have viral videos of my dad now that he is gone.
