Actually Lots of people have so I might pin this response. The egg just thawed out and returned to a clear liquid; Boiling doesn't cook things, heat does.

Thanks for the reply. I wasn't really sure exactly what would happen given I don't have any experience with vacuum chambers beyond these videos but, I guess it makes sense considering it is just a foam and foams go back to liquid given enough time. I'm curious if you could lock the foamy state in if you cooked it fast enough or if the heat would just make the foam settle faster.

step one: get a cup, vinegar, and a egg. step two: pour vinegar in cup to about half (just depends on the size, has to cover the whole egg. step three: put egg in vinegar, make sure egg is covered and wait 24 hours. that's it, you have a bouncy, transparent, shelled egg. (when bouncing make sure to not break it! its very delicate!

To those who thought this video was useless, it wasn't. It has inspired people to talk about various aspects of what was going on in the chaimber. Sientific discution on this is a way of inspiring new ideas and getting people interested physics and chemistry. There are unexpected results here that I'm sure got Cody and and alot of other people considering new possibilities and ideas. Cody, I'm sure you're helping to drive interest in science for the next genereation that is in grade school now. That is well worth while.

When I saw the video in my sub box I thought " what a stupid idea, it's clear that it will explode" but now I see that something as simple as an egg produces really interesting results when put into a vacuum. I think it is because the proteins in the egg white denaturalized due to the change in temperature, basicly the same as what happens when you boil an egg. A boiled egg is also able to maintain its structure and shape when you peel it.

Well, you actually answered a question I've had since I was working on my biology degree (back in the late 80s, early 90s). When the boiling point of something decreases (due to lower pressure), does the boiling process still denature the proteins? The answer appears to be no. The heat required to denature protein remains the same, even if the boiling point decreases. Material science is weird.

Oh, and something else. Since the inside of an egg is actually a single cell (an egg cell)... this is macro scale look at what happens to cells in a vacuum. Doesn't bode well for being exposed to the vacuum of space, does it? LOL

I don't think that it is simply freezing - the egg is denaturing and froze - basically the same that happens when you cook it, just when it gets really cold.

Protein denaturation isn't always irreversible. In this case, I suspect that with the negative temperature change, the egg yolk proteins were reversibly denaturated (rapid white color change with a smooth progression front, opposed to the spikey growth of ice cristals). No chemical bonds were broken: this needs energy to occur. Probably, the proteins turned inside-out when they froze and outside-in when they thawed.

+Cody'sLab Great stuff CoDy! There are so many comments I don't know if this has been suggested already, but since you have the equipment and I don't, here goes... Normal meringue is made by whipping egg whites with some Cream of Tartar, which is the potassium acid salt of tartaric acid, a carboxylic acid. As such, it can function as an acid. It is sometimes used as a component of baking powder, in which it functions as an acid, to activate the baking soda. In making your 'Vacuum Meringue' the removal of water will concentrate any non-volatile components. Any acid which is not pumped off will become more concentrated, lowering the pH. Perhaps it is possible to technically 'cook the meringue' by vacuum evaporation, to the point where the Cream of Tartar becomes acidic enough to denature the egg white proteins, a la ceviche (fresh raw fish cured in lemon or lime juice). If CofT is not acid enough, perhaps some other acid is? Nitric acid, for instance, has interesting effects on proteins, the xanthoproteic reaction. The _proper_ 'vacuum meringue' trick would seem to be a matter of having the acid initially dilute enough to avoid 'cooking' the egg white proteins before they have become a puffy foam. Challenge accepted?

+Cody - try carbon fiber fabric or roving for your electrolysis rig. Just keep your Electrical connection to any kind of metal above the water line and you should be golden. Higher resistivity, but that can be offset by the increase in wetted area of the fabric or roving. (roving or tow is what's typically used for filament wound construction and for stitching fabric preforms together before resin transfer molding).I made several batteries with zinc, nickel, or copper and short hanks of carbon fiber for applications that had to be flexible and biocompatible - we used ammonium chloride in agarose for a gelled electrolyte that also served as the passivation layer between the anode and cathode. unless you see ridiculously high temperatures and/or arcing, the carbon is completely inert.

I love it that Cody also tells the temperature in degrees Celsius. It makes it easy to understand. Since the whole world is facepalming themselves while the USA continues to use non-metric units ( and penny's).

Dissolved it in vinegar most likely. Try it yourself. Take an egg and put it in vinegar for a day or so

Cody, try throwing the white in a flask and adding sugar. Stir a little bit and check out if the pressure drop adds up for a good meringue

shaving cream will keep the window from fogging. coat the entire surface with it and wipe it clean with a dry cloth. worked well on my windshield in my old coupe to keep it from fogging up

Hi Cody! Speaking from experience, I would not recommend using stainless steel as an electrode for electrolysis due to the potential formation of chromate ions in the solution, including hexavalent chromium. I performed an electrolysis experiment using stainless steel rods and it worked well for about a week, then abruptly began to corrode vigorously. I suspect this change was the result of the loss of the passivation layer from the surface of the stainless steel. Although I have not tested it, I have heard that a large surface area of regular steel will not corrode and will work satisfactorily if the overpotential across the plates is less that about a volt above the standard reaction potential for the electrolysis of water.
