Thank you so much for making this video. I was just about ready to mill my first einkhorn flour to make a fresh loaf of bread. I was going to take your advice and only use half a cup of that flour and the rest all purpose. I had totally forgotten about the lemon juice so I'm definitely going to add that and what a great tip about adding the flower to the yeast and letting it bubble up before adding the rest of the flour. Your videos are so helpful. I just love them.

I just started baking with fresh ground Einkorn flour and it is amazing in taste. I also found that just "pouring" it into the bread pan without a second rise works well for me (I do not even shape it). I do smooth top with water but I think I will use oil oil next time. I also have less mess when doing it this way. I love the taste and nutrition with this ancient wheat.

I like to add some Einkorn to my regular loaves of bread. 2 cups hard white wheat & 1 cup Einkorn. I still get a beautiful rise with this.

Thanks so much for the video. I am so glad I'm not the only one that has had a difficult and sticky time with Einkorn. Will definitely do the 20 minute soak with the yeast and water.

I made 2 loaves of bread yesterday onion and cheese loaf. And raise and cinnamon im so proud and excited it is so good .I never thought I could do it ,so happy

Looks so perfect and delicious!! I have been baking with Einkorn sourdough bread for 3yrs or so. I actually have the Einkorn recipes book by Jovial owner Carla Bartolucci. A lot of great recipes in this book. My favorite grain!!!

This is fascinating Mary! The loaf looks great and yes, a perfect crumb too You did such a good job relating the potential pitfalls and positive applications for a successful Einkorn bake 😊 Have you had a chance to blend Einkorn with a hard white wheat? Does Einkorn play well with others? Or would blending it with other ancient varieties that have a better structure be a disservice?

I have blended the Einkorn with hard white and it makes a wonderful loaf. I do think that for the digestibility of the Einkorn, I prefer to either use it on it's own or mix with another ancient wheat like Spelt that has a better structure.

Do you have a pumpernickel bread recipe. I was researching and it sounds like it has a similar effect as sourdough for fermenting effects and high fiber. Looking for a good recipe for this and REALLY enjoy your videos. Love your sweet spirit!

Thank you! I have actually been making a new starter with only ancient wheat. So, now that it is active, I will be baking Einkorn and Spelt breads with the starter soon! I am so excited!

I only have a bread maker that i use to just kneed and rise my bread dough. Would that work? Or would that over work the dough. It usually takes 1 hr and 30 minutes, In the bread maker on the dough settings.

If you can customize the kneading time, it should work. I would cut the kneading time to the minimum.

Thank you so much for doing a video using Einkorn. We are pretty much only using Einkorn because of digestive issues. I need to learn how to take my present sourdough starter made with AP flour and use it to make Einkorn sourdough. Any suggestions? I love your videos and watch as soon as you post them.

My suggestion is to let your current starter to get very low and then feed it with the einkorn. It may have a trace of the other flour, but, it will be almost all einkorn. Thank you so much, I appreciate that!

Hi Mary, I just watched your video, and it really gives me hope as I’ve had so many disaster’s with “sourdough” Einkorn.. I’m anxious to try just plain einkorn. I do not have a bread mixer, just a dough hook on my Cuisinart, will this work just as well as yours? Thanks so much for all the tips you so generously share, ❤

Yes, you can use the dough hook with the food processor. Should work just fine.

Thank you for the explanation of Einkorn, as I've been thinking about getting some. I was wondering if insta-yeast could be used. Would it be the same measurement of 2 tsp. ? This afternoon, I made a deliciously moist honey loaf "quick" bread. I milled the soft white wheat flour, but I never seem to get the amount I need (I'll have to work on that) so I make up the difference with almond flour. So good. I sweetened with honey and never put in the extra regular sugar, only the honey. Added the olive oil and half cup of earl grey tea. I let it bake half way then added fresh cranberries with some brown sugar on top and finished baking. It came out so moist and delicious. Just thought I'd share. I hope that's okay. I am trying to make a decision on a grain mill, I watched your video comparing the nutrimill and wondermill but now that some time has passed have you determined which is your favorite? I keep going back and forth, I wish I could take some things I like from each mill and make my perfect mill haha! I would appreciate any help. You are the sweetest soul and I love watching you! I always gravitate to the Nutrimill. I can't say exactly why, other than it's just so easy to use and the results are always great. The Wondermill is wonderful as well, but, I just tend to go for the Nutrimill. Thank you so much! I appreciate that! God bless you!

Is that butter or ghee you spread on the hot loaf - or something else? I think that's a dough I'm not ready to try... I'm chicken to even try!! I still enjoy all of your videos so much!

Yes, you can make it with sourdough. You may need to use a bit more flour for the loaf. So just add enough to have a soft dough. It will be sticky, but, I have experimented with this recipe using sourdough and it will turn out just fine.

Do you make sourdough with einkorn? I would love to have a recipe for this. I am on a low carb diet and have made pancakes with einkorn discard which is delicious but really want to make sourdough.

I do make a whole grain Einkorn loaf from time to time. I use the recipe from the cookbook "Einkorn". It's for the batard and it works every time.

How long does your flour last once you have milled it?

I put mine in the freezer and try to use it within the month. On the counter, it will start losing nutrients pretty quickly so if I'm not going to use it within a few days, I put it in the freezer.

How do you keep your loaf from sinking? Every time I make einkorn bread, it looks beautiful when I put it in the oven, but sinks is it bakes. If I add more flour, it gets too dense, if I don't add enough flour, it sinks worse. I like einkorn, but I hate my sinking loaves

Oh boy, Einkorn is tough. It's about catching it at the exact right time during the rise to keep if from falling. If it rises too much it will sink. My advice it to catch it when it just get's to the top of the and then bake. Even after using Einkorn for years, I still have times when this happens. But, once I started catching it before it rises too much, I haven't had as many problems. I sure hope that helps!

@@TheRoseHomestead I'll try that...I only rise it once for 45 minutes, or even just until it reaches the top of the pan. I might try doing like you said and using less yeast too. I've been using Lisa's recipe from Farmhouse on Boone and her 3 loaf recipe calls for 3T and I divided for 1 loaf which is 1T, but since you are only doing 2 tsp in your recipe, that might be the problem too. Thanks for your help 😊

I haven't. However, to convert this particular recipe, add 1/2 cup of starter and decrease the water and flour by 1/4 cup each. Allow it to rise until it tops the loaf pan and bake.
