My folks were kids during the Great Depression. Because of that they felt it was important that our family had a milk cow. That cow provided our 7 member family with milk and butter. The cow also provided us with meat. Every year the cow had a calf. Our cow gave so much milk we bought a second calf from a local dairy. So this cow fed a family of 7, two calves and we also sold gallons of milk to 2 additional families. We did not pasteurize our milk. Our cow’s milk was consistently tested and was always good. We made cottage cheese sometimes but not consistently. There was 3 or 4 inches of cream on every gallon of milk. We only skimmed cream off when we needed to make butter. I really don’t know why I felt the need to tell anyone this except to say there are healthy ways to consume milk products. Our family cow was a significant contributor to the health and well being of 3 families. When my folks were broke we never went hungry directly related to owning a milk cow.

Cassie Oz what is a housecow? as a kid I had Jersey and Gernsy milk 8 years. Then I went off to college and then get married. After I left the farm except for a short period of time about 7 yrs ago where I tried raw milk but location too far, had the store bought stuff. I’ve since learned there is the A1 casine ( Holstein cow which is store milk) and A2 casine which is from a cow like our Jersey. People who have problems with the A1 can sometimes drink A2 milk without any problems. The same goes for eating wheat product in Italy but then coming back to the states in those with gluten issues can’t eat bread and wheat products in the states. Because here we have hybridized wheat and over there they don’t
@cassieoz17024 жыл бұрын
@@digimom82 housecow us just the general name for a cow milked for home use (ie not a 'herd' cow). I milk a Jersey and an Australian Illawarra Shorthorn girl. The A1/A2 thing is contentious. Some studies have suggested that if folks don't know what milk they're drinking, the symptoms are inconsistent. There are two genes for the 'A' proteins in milk and all cows express A2 proteins. Most holsteins are A1A2 and so are a lot of Jerseys. SOME Jersey's are A2A2 so the cow must be tested to confirm. The benefit comes from the absence if A1, not the presence of A2. Hybridised wheat is ubiquitous since about 1965 and the durum wheat used in pasta is a high protein (ie high gluten) wheat.

@@jackimoya Dairy practices vary enormously so SOME but not all commercial dairy cows. Some ethical dairies raise the calf with the cows. Of course the calf's fate depends on whether it's male or female. In my area male calves are castrated (intact dairy bulls are very aggressive) and sold as 'lawn mowers' to smallholders to raise as beef (not commercially viable as beef because of low yield). I dont understand what you mean by 'forced to be pregnant'. Cows with a herd bull will be pregnant again 1-3 months after calving (ie every year). This is the natural breeding cycle of cattle.

Man has survived thru centuries doing it this way. When you boil it (Pasteurization ), you kill all the good bacteria ! Long life milk is dead ( UHT stands for ultra high temperature), and it's the one that supermarkets want us to drink because they can ship it all over the world and store it for a year or so. They save money on refrigeration, and therefore are following the plan of Agenda 21 ( which is no refrigeration in shops, because they can't be run on solar ). This means no fresh meat / dairy products / frozen vegetables or prepare meals, and no fresh juices ( only the shelf ones that are also boiled to the shit house ). Well be living on a few choices of canned foods and Gmo vegetables.... just like they're doing now in Cuba !

I am sensitive to A1 casein & only recently discovered I could find A2 milk at Whole Foods, but A2 yogurt is not available. I have been eating goats milk kefir instead, however, and find it preferable anyway. It's not only safe for those w an A1 casein allergy, but due to the fact that it comes out of the goat naturally homogenous, the fat can't be skimmed off, so it is always full fat. There is also no sugar added, so it is not sweet at all, & only has 10 total carbs per cup, so doesn't trigger cravings in me, whereas goat cheeses do, for some reason. So it's a great substitute for cows milk yogurt, IMHO. .

It's worth pointing out that human genetic adaptation to allow lactase production to digest milk lactose as adults has occurred several times, independently of each other. That's indicative of strong evolutionary pressure. It shows that dairy was important for survival to our ancestors. Also, if someone ceases all dairy for a significant amount of time (varies, according to the person), maybe for a year or more, then the body will cease to produce lactase - permanently. In order to continue to produce lactase as adults, the stimulus of ingesting at least some lactose is needed. This has been known for decades, but among keto guys, it doesn't seem to be common knowledge.

The milk I buy from them is raw, full fat with a thick layer of cream on the top. Their yogurt is made with this same milk and has a thick layer of cream I have to stir into the yogurt. Zero sugar added, nothing extra added except the necessary cultures. I sometimes make my own yogurt using beef gelatin from this raw milk so I do not have to pasteurize it at all and it sets up nice and thick. I am not a milk drinker but hubby is so I make sure he has this. I do buy a low-temp pasteurized A2/A2 milk, full fat out of southern CO for my hot mocha again with a thick layer of cream on the top. I use 33% sour cream, butter, cheese and whipping cream to get my fat in on carnivore. 4.5 months carnivore after a year of low carb high fat to keto. I know everyone recommends suet or duck fat, but that’s not readily available or in my budget. As for milk, I can’t drink regular skim of any sort. But I have discovered that I can thin out whipping cream to satisfy the craving for milk. I use ¼ cup whipping cream in a 2 cup glass and top it with tap water. Sometimes if I'm craving something sweet I add some stevia and vanilla.

Dairy is my crutch on keto as I lean towards carnivore and Im sure it is for many. Its the dopamine reaction even when other foods are more nutritionally dense and compensates for the cost. As much as watered down cream is milky, it has zero protein so its simulating an emotional response and heavy on calories for near zero protein. Duck fat has over 10g of fat per tbsp and hwc 5g so cost per fat gram is similar if not better for duck fat. I found if not actively eating the fatty cuts of meat and breaking down my own tallow and chewing on the fatty pieces, I'm always short. I feel I allow myself to do it as Im an addict. I've been at maintenance nearly 2 yrs and feel like dairy has become a bigger part of my life...making cheeses and trying new things but cant help but feel Ive just shifted my addictions :(

@@dana102083 I hear you! That is why I stick pretty much to ribeye and some eggs, a bit of cheese, cream in my coffee, stevia, a bit of avocado, some mayonnaise, water. I find I am happy if I don't look at recipes, or cook shows, or any images of the foods I crave. I don't have them in the house and I don't think about food, other than when I am hungry. Then I get up and I put two ribeye steaks in the air fryer, wait 10 minutes and eat. Have a glass of water and go back to what I was doing. By simplifying to the max what I eat, I reduce the stimulus that creates the craving.

Tina Thevarge Did you try lard? I understand in some places it's hard to get the pure stuff. Where I live (France) it's about the same cost as butter. There is goose fat but it's very expensive, probably like your duck fat. If you're not doing it already, keep the dripping from your cooking. My mum always had some dripping in the fridge ready for use. I tend not to have so much because I usually fry any veggies in it (I'm not carnivore), which gives taste - and fat - to them. My children actually like the veggies done that way :-)

Ekondig G i have tried lard. I have some in my fridge. I just reach for butter and sour cream more. The lard I have locally has a different texture that doesn’t blend well in recipes like butter. 6+ months carnivore now. I do keep drippings from bacon, but it’s not always in the budget either.
@TinaThevarge4 жыл бұрын
dana102083 I have to try to work around my husband who still eats SAD even after watching keto help me for 9 months and carnivore help me more for the last 6. Because he’s not willing to change, there’s not much room in the budget for extra meat or exotic fats for me. So others might have more of a budget to work with to buy more nutrient dense meat. I work on converting my husband to keto fats so that at least he's not eating so much vegetable oils in things like salad dressing and mayonnaise. Maybe one day he’ll drop the belief that you need to have a monstrous bowel movement everyday, but until then, I do what I can with the tiny budget I have.

Really interesting. First time watching. I started going Keto phasing in from January and strict (trying to) from about March. I struggled with terrible carb addiction. I find like the addiction never really goes so I find for myself that it is so true that I have to avoid triggering it. I have been doing well but couldn't get a proper answer about milk. I think I get why I am struggling with it. I only allowed myself one cup of coffee late afternoon with milk. With my carb addiction problems (cravings) it is probably best to avoid milk then. This was an answer for me

There are a number of good yogurt brands available in the US if you look for them--Fage, Wallaby, Siggis, Skyr, Nancy's... and more. But a lot of them are produced out of the country. You can also easily make your own, especially with an Instant Pot with whole milk and 2 T of plain yogurt per gallon of milk. You can also make ice cream and not put any sweeteners in (or if it works for you, honey or 100% maple).

Dividing nutrition from hydration is positively genius. I would just feel so dried up at night first thing I grab is milk I hadn't noticed how much of it I can drink, my goshness. I used to go for water more but it keeps feeling like I need something that milk has, maybe the thickness to feel better or something and then I got a kid (the kids a boy) I think he takes it in too but I had been kind of winded yesterday and I just needed to get back home asap I did experience nausea. I think I don't eat much of fruits or meats and I don't do a lot of grains either. Just like fruits don't fill and veggies really don't. Meat, nuts those are more filling for me than anything else. I just like milk though especially whole milk.

Loved this. Part of the biggest issue I see in the US is that we use the wrong cow for milking here. Frankly, we use goat milk at our home. We can get raw and or whole milk that has been lightly pasteurized. No sugars added to our dairy. 😊

I've been binge watching your vids doc. Have an appointment with you in June of 2024 (I came to realize quickly you're an internet sensation and there's a ton of demand for a consult) and very much looking forward to it. I'm 6'3, 203 lbs., lean & muscular and physically active. 49 years old. I've been consuming a glass of non-pasteurized milk almost every day and I put non-pasteurized cream in my morning coffee for about a month now. Always from the same source that a friend of mine introduced me to where she's been getting hers for over a year now. She's never gotten sick from it and to date neither have I. It's a part of one of my 2 daily meals and always at the end of consuming my meat and light serving of veggies. Delicious and that final touch for satiety.

Milk only comes from mammals. All these different things they're trying to call milk are so irritating because almond just does not make milk and neither does soy or oats. There is an American yogurt called Brown Cow, Cream Top, whole milk yogurt. If you buy the plain one it doesn't have any sugar added. It's creamy and delicious, with an extra layer of creamy yogurt at the top. I didn't pick it up when I saw that it was in stock, because it really has the same carbohydrates as a glass of milk. And I guess I thought yogurt would have less carbohydrates. So I just stuck to my milk. Whole of course. I did buy some heavy cream to go with it but it turns out that I had to take it back because I didn't read the label till I got home and ended up it had mono and diglycerides in it and that stuff is poison. Lesson learned, read every label even if you think it's a whole food. It may have been tampered with by the food demons.

I'm in the USA & we can easily buy "whole" milk plain yogurt and whole milk low-temp pasteurized non-homogenized grass fed cow milk, so I make my own yogurt with the glass bottled milk. The milk is about $11/gallon so we don't get as much milk as we used to and I have the homemade yogurt with keto toppings or occasionally raw honey from my bees & cinnamon. Keto granola with the dried strawberries was amazing as a mug of "cereal" and yogurt topping.

I enjoyed making full cream raw milk kefir with live kefir grains. The microbes of the kefir grains consume lactose for their nutrients, sigificantly reducing the lactose content. Ive learned to enjoy it plain, adding a few Tablespoons of chia seeds per quart to sit for a few hours or overnight. The acidic medium neutralizes the lectins in the chia seeds as well. Lovely.

I have avoided milk since I got Covid last year. I was already lactose intolerant past a certain point (forget drinking a big glass of milk unless I want to be a blimp), but since covid I can't even have enough milk to eat with cereal. Now that I'm a ketogenarian 😉 I have heavy cream and cheeses, but I avoid milk. And for the first time in my life, I'm not plagued by gas half the day. I also have less pain. I have fibromyalgia, but now my baseline pain is gone. I still have pain, but it comes and goes instead of sticking around the whole day like before. I've been on a ketogenic diet for a month now, and I've lost five pounds. Sometimes I'm tempted to have carbs, but I know the pain will come back and it's just not worth it.
