INGREDIENTS (makes 4)
MEAT FILLING
- Outside round steak (Sirloin tip steak works too)
- 1/3 cup flour
- 2 teaspoon paprika
- salt
- pepper
- oil
- 1/2 medium onion
- 2 garlic cloves
- 1 tomato
- 4 tablespoons + 2 cups beef stock
- 1 tablespoon worcestershire sauce
BUTTERY DOUGH (makes 2, please DOUBLE this recipe to use up all your filling)
- 3/4 cup flour
- 1/2 tablespoon sugar
- 1 teaspoon baking powder
- salt
- 3 tablespoon cold butter (mine was unsalted, if yours is salted use less salt)
- 1 tablespoon cold water
- 1 beaten egg for egg wash
METHOD
FILLING
1. Slice outside round steak into small cubes, dust (flour, paprika, salt, pepper) and shake off the excess.
2. Heat a pan on medium heat, and melt the beef fat and oil into the pan (or you could use all oil, beef fat just has more flavor).
3. Add in your floured beef and fry until all sides are browned (~8 minutes).
4. Remove the beef and add in your additions (onion, garlic, tomato).
5. Add in beef stock to cover the bottom of the pan and scrape off the bottom bits that are stuck to the pan (called fond).
6. Add the fried beef back in and add beef stock to cover all of the beef, and worcestershire sauce. Please add salt + pepper if you like, my beef stock was salted so I didn't have to.
7. Cover and simmer for 40 minutes. After 40 minutes mix 1 tablespoon of cornstarch with some of the beef soup and add into the soup. Simmer for another 10 minutes uncovered.
DOUGH
8. Mix flour, baking powder, sugar, salt. Then add in cold butter that has been cut into small cubes. Work your fingers through the butter and dough until fully incorporated like sand!
9. Add in egg yolks and water, and mix until it comes into a ball. Flour your work surface and roll out your dough to 4mm. Cut out circles using a bowl of your choice.
ASSEMBLY
10. Add in your filling on one half of the circular dough, and fold it over. Seal the edges by pressing the edges together by squishing with your fingers. Make sure you press it firmly so the filling does not leak during cooking! Then turn over the edges towards the center to create a rope-like design.
11. Draw in design using a sharp knife.
12. Brush the whole pie with egg wash (1 tsp water + 1 beaten egg) to create a golden crust.
13. Fry 350F oil until golden brown ~12 minutes or bake 375 F for ~15 minutes.
14. WAIT UNTIL COOLED LOL. And enjoy!
