I put rice and beans on a big bed of lettuce and add cheese, tomatoes plus salsa. We call it a taco salad.

We had 10 year old beans last night. I soaked them for 24 hours before cooking. Rice, onions, carrots, and dried split peas. If you want, cut up a hot dog or sprinkle on some cheese. Tina

Cabbage and tomato soup :) 2 cups water, 1 head of cabbage, 1 can 28-oz diced tomato, plus seasoning. I cook rice in a rice cooker :)

Tip from me! I cannot digest onion and husband cannot digest peppers. I chop up onions and peppers and put them in ziplock bags (at least overnight) in the freezer, and then take them out right before cooking. Much easier to digest :-D I usually have easier access to borlotti beans, those are delicious :-D

I can't do raw onion either. Found that out the hard way after my friends husband added raw onions to cooked mashed potatoes. NEVER AGAIN!!

@@WhitneyAbrina That's unbelievable! I've never heard of adding raw onions to cooked mashed potatoes. It sounds disgusting and I know my stomach wouldn't have been able to tolerate the raw onions. It's just wrong. 🙄

Could you put the onions and peppers in a food processor? You would still get the taste, but it might make them easier to digest. Just a thought.

Spanish rice and refried beans is a staple for me growing up. Now I like using the fresh beans to make chili, smashed beans in eggs for breakfast. Some ideas and thanks for your videos.

Soup! A vegetable soup using rice, beans, corn, green beans, whatever is in the crisper with a chicken broth base. If you want a tomato base, think fagioli, with rice not pasta.

Soak the brown rice then rinse . I make a breakfast a brown with Raisins, cinnamon , almond milk vanilla sweetened

It's funny, I can think of a dozen things, just off the top of my head, for rice dishes but only a couple of ways to use pinto beans. Beans and rice and bean soup. Well I guess there's bean salad too. But when using beans and rice together, it usually has a Mexican flavor. I really need to think of more ways to use these two items together. 😏 I love 15 bean soup and you can always amp it up with rice and I also like to add barley. But that doesn't really fit the protocol of this challenge. Way to get us thinking Jaime. And like I've said before, beans and rice are staples down here. Growing up my family would have a big pot of pinto beans. It's a great side dish and was often served with BBQ. And most BBQ restaurants (4 in my little town) that serve beans on the side. You've given us some good options and some food for thought. 😉 Thanks for sharing another great video! 🥰

I make spicy pinto beans over rice with cheese....use half a can of chipolte peppers in adobo, 2 cans rotel with lime and cilantro, pack of chili seasoning, dried cilantro, garlic powder, cumin. Typically blend all of the seasonings together and add to 1lb pinto beans with 4cups of water. It is the only way I will eat pinto beans outside of refried.

I like to cook the pintos longer and thicken the “juice” then serve them over cornbread. It might be a bit unconventional, but I can see no reason you could not add rice to the dish. I watched a video recently by “In the Kitchen With Momma Mel” where she used pinto beans to make bean cakes. She pretty much just thickened the cooked beans with flour and fried them into patties like potato pancakes. She made them into bean sandwiches (much like a black bean burger) and served them with fried potatoes. You could easily just exchange the potatoes for rice mixed with whatever flavorings your family likes-Italian, Mexican, etc.

is it possible to make rice and beans that are nightshade free (I have an intolerance to nightshades). So that means no tomatoes and no pepper/capsican.

You don't have to eat rice and beans in the same meal, but it's a good practice to eat them in the same day. Your body will extract the amino acids it needs from each one. That being said, it almost seems like they are meant to go together naturally. So many rice and bean recipes from around the world.

Here's how I cooked my beans in a slow cooker: -Soaked them in water overnight -Put them in the slow cooker and covered with water, about an inch above the beans -Cooked on high for 6 hours I still had issues sometimes with them not cooking fully. But if you're patient, you can certainly cook them longer!

Warning. You need to pick your beans . This means pour them out on a counter and pull out all rocks, burnt beans and broken beans. If you do not then you could end up with a BROKEN TOOTH! You will also end up with some cooked beans and some that are not cooked throughout and some that are mushy. I suggest you do not do just pour them out of the bag/jar and glance at them as she did. Be careful and dont look thru your beans the lazy way.
