Ingredients: Egg - 1 Sugar - ½ cup Regular plain yogurt - ½ cup Vegetable oil of your choice - 60g Vanilla extract - 1 tsp Baking soda - ½ tsp Baking powder - 1 tsp Salt - a pinch All-purpose flour or cake flour / low gluten flour - 160g Filling ingredients: Apple - ½ an apple (Peel skin and dice into small pieces.) Sugar - 1 tsp Cinnamon powder - 1/4 tsp Methods: 1. In a mixing bowl, add in egg, sugar, and mix until the sugar has mostly melted. 2. Add in yogurt and mix well. 3. Add in vegetable oil, vanilla extract, and mix well. 4. Sift in all-purpose flour, baking soda, baking powder, salt and mix until smooth with no lumps. 5. Add in diced apple, sugar, cinnamon powder, and mix well. 6. Grease a 12-cup muffin tray with butter or use cupcake cups/liners. 7. Scoop cake batter evenly into the 12-cup muffin tray. 8. Bake in the oven at 180C (356F) for 20 minutes.

Ingredients: Australian rib eye (M7 grade) - about 40oz Contact: WhatsApp: 55799299 / 55782629 (Hong Kong location only for purchase.) Sauce ingredients: Rosemary - 2 sprigs Minced garlic - 2 cloves Butter - ¼ cup White mushroom - 1 cup (Sliced) Whole grain mustard or Dijon or yellow mustard - 2 tsp Red wine - ½ cup (If using white wine, add 2 tbsp of cooking cream.) Capers or white vinegar - 1 tsp Juice from the rib eye Garnish ingredients: Rosemary Mint leaves Methods: 1. Coat the rib eye with a generous amount of salt and black pepper. Spray a thin layer of olive oil. Set aside. 2. Heat up a frying pan to very hot or do the water drops test by sprinkle some water droplets into the frying pan until they form water pearls. 3. Once the pan is ready, add in the rib eye and DO NOT move it until a sizzling crust is formed then flip to the other side and continue searing and including all edges as well. 4. Transfer the seared rib eye to an air fry and cook it for 9 minutes at 200C (400F). 5. After 9 minutes, transfer rib eye to a plate and VERY IMPORTANT to let it rest for at least 5 minutes to lock in the juice. For medium-well doneness, let it rest for a further 5 minutes. 6.
