It is time to harvest the Red Kuri Winter Squash. When cutting the squash off of the vine, it is important to keep as much of the stem as possible on the squash to prevent bacteria from entering the stem end and causing the squash to rot from the inside. After removing the squash from the vine, it is important to cure them for a couple weeks before putting them in storage for the winter. The curing not only hardens the shell for winter storage, but sweetens the fruit inside.
