You are kidding right? Work Sharp is always garbage! The diamond abrasives fall off immediately and the ceramic disc is a joke. This dude gets paid to say otherwise! I bought the work sharp, Hone, generic and Tumblr. The Hone was the best by far.

These rolling sharpeners are (wait for it...) revolutionary. I bought a set off Aliexpress with 2 diamond and 3 ceramic stones. It's so easy to keep your angles, which I had a lot of trouble with freehand... and it's so much more simple than the fixed angle jibs.

I used my Norton Multi Stones when I had a restaurant and I've been working with it again and I mastered getting a great 20 degree edge finally. Stones takes practice and patience in order to master them. I hone straight razors which are much different and after each honing I do a test shave before sending them out...Not sure if I would purchase one of the Work Sharp systems, maybe if the price were right. I do like the portability and the fact you get 3 easily replaceable stones but that sucker is SHARP..I'm ordering one! Thanks for a most competent review and instructional!

Depending on the option you can get a really excellent set of sharpening stones with a sink bridge for about the same or even less money. A good set of stones, although maybe not for everyone, will be able to sharpen every single knife without fail, and won't need any additional "hacks" to make it work with certain knives. I highly recommend it if you're passionate about your knives and you have reasonably steady hands. Start with a cheaper knife to practice, and once you get the hang of it you'll be sharpening your chefs knives in no time.

A 10 bucks diamond stone and a strap with a compound is all someone really needs. Oh and some way to make sure they hit a consistent angle. Like a thumb at the back of the blade with a sharpie mark where the knife meets the thumb to keep it consistent.
@satan101101
@satan101101 10 ай бұрын
I would say it’s similar but a little bit better than the original 1:it have 4 angles to choose instead of 2 2:you can change the sharpening disc for a different grit But the downside is still there! It still miss the tip of some knifes and it can’t sharpen tall knife like a cleaver without stacking up the drum .

I think a better comparison (price and functionality) is the regular Horl 2 ($189), not the Horl 2 Pro ($429). The Pro is probably a bit over the top, but the fast rotating planetary gear is kind of cool. I think you have presented the advantages and disadvantages of these rolling sharpening concepts very well.

I have a Lansky system and like it but I usually wait until I have several knives to sharpen because it takes a couple of minutes to set up and get the knife in the clamp. By the the time I got one knife set up ready to start sharpening I would have it sharpened with this simple system. I'd probably still only use my Lansky system on my best knives but for the kitchen knives that need sharpening fairly often (my sister has some inexpensive kitchen knives) this would be great, could even throw it in the same drawer with them. Great video!

Awesome little set up. Do you think that you could elevate the roller by putting it on a cutting block, so that you could clear handles and plunges? My thought is that it would be the bottom side of the circle giving you more room before it hits a handle or plunge.

Quick solution for kitchen knives where you end up hitting the handle before getting all the way to the heel is to use a board or book to raise the sharpener. This will actually give you a better angle of attack as the wheel will contact the blade at a more perpendicular angle.

I have a Hone rolling sharpener...I love it...has 15 & 20 degree angle...you can change the angles using shims under the knife block ...playing cards or thin silicone mats cut to fit ( Amazon) I don't care witch rolling knife sharpener you have...they will make micro bevels with all the angles...I have checked my holding block...perfect 15 & 20 degree angles....if you put a flat piece of steel on them it will sharpen to 15 or 20 degrees perfectly...Knives are wedges from the spine to the apex...put a knife on 20 degrees & it will sharpen somewhere between 18 & 15 degrees depending on the width of the spine...my Klein angle finder verifies this. Have you tested to see what your real finished angle is? What would be the best way to get your desired angle?

This is the first sharpening system that doesn’t scare me, so I look forward to getting it eventually. Also, since I’m not that plugged into the “knife world,” I didn’t even know rolling sharpeners were a thing until WS published their first vid comparing them. Before that, I was thinking I’d eventually get a coarse/fine DMT stone when stropping finally does me no good with the Kizer Swagg’s Swag Back, never mind reprofiling my five year old Good Cook chef’s knife. But this seems a like a way to get a good edge with as much control and patience as possible.

This comment is similar to my last comment. We have the Wusthof sharp knives and we use a honing rod after each use to keep it sharp as new. However, making sure you sharpen at an exact 15 degree angle is not nearly as acccurate honing as it is with your 15 degree magnet angle. If we use the 15 degree roller after say 2 uses, will that be sufficient enough to keep it sharp as new or should we start with the 600 and then use the ceramic. I'm thinking along the lines of keeping the knives sharp at all times vs letting them degrade to needing to use the 320 or 600. Thx.

when hitting a handle on some knives, would it make sense to lift the sharpening roller up by placing on a cutting board so the sharpening will be done by the bottom portion of the roller?

How about Cold Steel Trail Master 5/16” blade? I’d prefer to sharpen the existing edge, NOT strip away a lot of steel creating a new one. Thoughts?

Hey Jared quick question, in the scenarios where certain folding knives wouldn't work because the handle/scales/bolsters are making contact with the end of the stones, would disassembling the knife and just putting the blade by itself onto the magnet system work out? Would the blade be able to be full sharpened? I totally get that there's still the possibility that the stone is gonna hit the plunge or the ricasso and that the handle/scales aren't gonna be the problem in those situations, but I'm curious if in the situations where it's just the handle making contact, if disassembly would fix that issue. Thanks for the video!

yeah you could make a handle for blades like this. something as simple as a thin piece of plastic and a screw that goes through the pivot hole would probably work for most knives. you could make a clamp version to

Why not put a block under the knife holder so that the wheel is making contact an the lowerr 1/2 or 1/4 of the wheel. That should allow the wheel to reach all the way to the end of the cutting surface?
