Fillo Feta Cheese Pita
Crispy Fillo outside, juicy feta stuffing inside and a drizzle of honey on top.
This delicious feta cheese pita is so easy to make!
Prepare Fillo pastry at least 3- 4 hour prior to making your Pita
Fillo Pastry
INGREDIENTS:
Ingredients for the homemade Fillo Pastry
- 2 cups plain flour
- 1 teaspoon salt
- 150mls warm water
- 5 tablespoons olive oil
- 1 tablespoon white vinegar
- 100g melted Butter to brush the Fillo Pastry sheets
Ingredients Cheese Filling:
- 4 sheets of homemade Fillo pastry (2 FOR THE TOP - 2 FOR THE BOTTOM)
- 370 g feta cheese CRUMBLED
- 1 cup of plain yogurt (Jalna is the best as this is thick yogurt)
- 4 eggs
- small bunch of fresh mint or ( 1 teaspoon dry mint )
- Pepper and a pinch of salt
- Sesame seeds to sprinkling on top of the pita
- 1/4 cup honey
METHOD:
Pre heat oven to 180 degrees
STEP - 1
In a large mixing bowl add the flour and salt, In a jug add the warm water, vinegar and oil and pour this into the flour, If using a stand mixer use your dough hook to mix and combine the ingredients for about 2 min ( Tip the vinegar helps to make the dough crispy)
Place the dough on your bench top and work it with your hands to combine. Cut your dough into 4 pieces and wrap each one with glad wrap and place in the fridge for 3 - 4 hours.
(If you can make this the day before that would be even better.)
Place one ball of dough on a floured surface. Press with your fingers to make a circle, Use a rolling pin to roll out the dough, until it becomes a very thin round sheet. Place some flour on the side of your bench and the place the Fillo pastry and brush some butter on it and then repeat this again with the second piece. Place the second piece over the first one.
You will need a round baking pan 26cm, brush with butter, and then place the 2 Fillo sheets in to the pan leaving the Fillo pastry hanging over the side, you will bring them in after you have added the filling. Brush the side with a little butter.
STEP - 2 Cheese Filling
Prepare your cheese filling by placing everything in a large bowl, mix well and then pour this into your pan.
Bring in the sides of the Fillo pastry over the filling, If the pastry feels cold. warm up the butter and brush a little to warm the pastry.
STEP - 3
Repeat the same with the other 2 piece of dough for the top layer. One they are made ruffle them on top of the pita and then brush with the butter. Sprinkle the Sesame seeds on top of the pita.
Place your pita in the pre heated over for about 45min or until golden and crispy.
Once cooked take it out of the oven and pour the honey on the top.
TIP - Place the honey in a microwave for about 30seconds to make it easier to pour.
Allow your pita to cool down for about 15min before cutting.
** If you are using brought Fillo Pastry use 8 sheets on the bottom and 8 sheets on top. Butter each sheet. **

That looks so good, I'll definitely be making this! Question, have you ever made the filo the day before and left in the fridge? Just thinking of time saving on the day I want to make the tiropita, thanks :)

Yes it will actually work out better if it rests in the fridge over night :)

Nice, however, did you use the 4 layers of pastry?? 2 on bottom and 2 on top??
