@@UnLikeU As a filleter here in Arctic waters I agree with you that there was no waste to be mentioned. I do not know this fish but the basis of filleting are the same. For example cod, black cod, northern pikes, salmon, perch.....etc. This butcher did a great job.

@@HarPlayer no he ain't. A professional knows you can't cross contaminate fish with other types of fish and that white, Michael jackson/cut resistant glove is in contact with every fish. No latex free gloves. And no cheek meat was collected. Wanna talk about fish more I suggest you become a fillet-er first
