Ingredients:
(20 grams) dried guajillo chili peppers (not hot)
600 grams kingfish steaks
Salt
Black pepper
Cooking oil
(200 grams) chopped onion
(15 grams) garlic
(20 grams) tomato paste
One tsp cumin
One tsp coriander
One tsp paprika
Half a tsp turmeric
Hot pepper (optional)
Coriander for garnish
Rice or bread for serving
Instructions:
Soak dried guajillo chili peppers in hot water for one hour, then blend into a smooth consistency with a bit of the soaking water.
Season fish steaks with salt, black pepper, and some of the guajillo pepper sauce.
Mix cumin, coriander, paprika, and turmeric in a small bowl. Season fish with half of the spice mix.
Fry fish in hot cooking oil on both sides, then remove from the pan.
Saute chopped onion in the same pan, then stir in garlic, tomato paste, the rest of the pepper sauce, salt, black pepper, and the remaining spice mix. Add hot pepper if desired.
Pour in two cups of water and cook over medium heat for 5 minutes.
Add the fish back into the pan and cook over low heat for 15 minutes.
Garnish with coriander and serve with rice or bread.
