The only problem with healthier foods is that they are astronomically more expensive than unhealthy options. It's hard on a family of 4 with one income. It's so sad and frustrating :(

Buy single ingredients, eat seasonally(produce), do your own prep work esp when it comes to meat and produce (don't buy cubed stew meat, as an example-get a roast, cut it up at home and save. Ditto pre peeled, cubed squash, squash spirals, etc-do it yourself.Buy canisters of oats (whole foods is $5.19 large canister vs say Quaker oats packets at about $3.50 for 8 servings vs 30-do the math). learn to bake bread/rolls. Make soup from scratch etc. I raised 4 kids, 3 are male, on a lower income, it can be done.

RE: citric acid added to jarred tomato products. It is added to ensure proper acidity for the canning process; today's tomatoes do not have as much acid as previous varieties. Food science supports this. I am a home canner, this IS a vital ingredient.

@@switchhazel3517 One can NOT compare the capabilities of commerical canneries with those of a home canner. I follow the national center for the home preservation of food's guidelines, backed by tested food science methods and lab results thru the U of Georgia. Yes, as another example of differences, commercial canneries can safely process cured meats like corned beef, while a home canner is unable to. Look up the site.
@eckankar7756
@eckankar7756 4 жыл бұрын
@@switchhazel3517 Almost every botulism case in this country for the past 20 years has been related to tomato products (also canned cheese products). The spore will produce the toxin in an anaerobic environment such being canned to be shelf stable. Tomatoes were naturally acidic which prevented the botulism spore from surviving in a canned environment with a pH of 4.3 or less but over the years tomatoes have been hybrid for less acid to taste better. Pressure canning at temperatures of 240 Degrees F for over an hour can destroy the spore in the canning process but that heat and time can also burn the natural sugars in the product giving an off taste, tomatoes or pasta sauce, etc. Replenishing the acid to the product can assure the product be canned at lower temperatures, avoid burning the sugars yet maintain the pH that will assure the product will be free of the botulism toxin. Just saying.

Love you guys, thanks for upping my food IQ! BTW, loose tea is the way to go, rather than tea bags (which are usually made from 'fannings', which are the drops and broken leaves that don't make the grade for whole leaf, loose tea.) Altitude and harvest time affect pesticide use! The higher the altitude and the earlier harvest (March & early April), make for little to no pesticides needed. Buy direct from growers if possible, but an astute middleman or company serves just as well and will usually state altitude & harvest date. Fresher tea with decidedly robust flavor! If you've only had supermarket tea in bags, you've never tasted REAL tea!

Natural flavors don’t always mean what you think. I’ve worked in the food industry for 30 years. I’ve seen several processes and knew the exact ingredients of 100’s of items. Example, ketchup. Since they use the worst tomatoes to make ketchup because all the good ones become stewed, diced, etc...”natural flavors” pertain the amount of organic material (worms, bugs, etc) that are included in the cooking process. Many many items on the shelf include natural flavors for that reason.

Nice video. Interesting to learn about the lentil , replacement pasta , i been eating it lately so as to avoid the standard pasta and its super high protein. Its actually lentil and chickpea does seem to give me a stomach ache . After what Thomas said abt the chickpea, it makes sense .. i will experiment with lentil only
