I used to make semolina souffle in the past. It is a kind of custard like pudding made with semolina. (very popular in my country) You should give that a try. Top off with a nice tart fruit sauce, something made with berries for example. I still love your channel eventhough I am a plant eater but I convert some of your recipes to make them vegan. That proves how much of a fantastic kitchen godess you are Titli. :-)) By the way, I recently found out that you can use the cooking water from chickpeas to make a frothy substance like beaten eggwhite. Have not tried it out yet but maybe you can and see if you can come up with amazing recipes.

Johannea72 Potatoes that make good mash and tend to break apart when boiled, as opposed to waxy potatoes that keep their shape well and make good fries or roast potatoes.

Chopped cooked meat?? Now you've gone and spoilt it ..? ;-] Seriously, when first a vegetarian back in 1960's, used to make a lot of soufflé's. Cheese was all. While I have a dish for the purpose. My soufflé days seem long gone, as I seldom eat eggs anymore. Never would have thought of potato soufflé? Also, mine used to rise so much, I had to add greased paper at the top. I suppose that's the heaviness of the tatties?
