Only mistake is trying to make a rue with the veggies in it. The rue should get like a light peanut oil color ( kinda like looking thru a bottle with corn oil in it that light color so your chowder isn't brown when your done ) and you can't do that without burning your veggies.

This "Chef" is incorrect about what has to be in a chowder. Chowders started out with fish as a base. Potatoes have been added over the years and now there are even vegetarian chowders.
