I like using half-cornmeal and half flour. The flour gives it a nice stability, but the cornmeal has a nice texture and crush. Great video. I can definitely hear your personality in the recipe.

Philly Boy Jay I use to use cornmeal and or flour and seasonings years ago and then they came out with the packages for frying already together and I started to use that for quickness and convenience. Well tonight I did not have any more of the package seafood seasoning and forgot how to make it with the cornmeal and/or flour so I did a search and youra was the 1st to pop up. Yoooooo when I tell you it reminded me of my momma's and grandmom's weekly fish fry at the house.. whoo whew!!! No more seafood bag seasonings for me. I will DEFINITELY be looking at your other recipes and trying them as well.

I like a 50% corn meal and 50% self rising flour. I also use red pepper flake instead of paprika, just personal preference. And I use deeper oil so moisture doesn't escape through the top of the pieces. Finally, I try to stick with Cod, or Haddock also just my personal taste.

I've never thought of "yellow cornmeal". The fish was so golden & looked soooo great. I was going to do fried wings but now I'm making the catfish nuggets with the same ingredients you used for the tilapia & make my own homemade buffalo sauce. I don't know how it would taste with the sauce but Im just going to try something new/different. Fish is one of my favorite foods!!!
