Dried fruits are soaked in black tea syrup to make a moist pound cake.

50 g water
50 g cane sugar
1 tbsp rum (optional, can be added without)

100 g unsalted butter (room temperature)
90 g cane sugar
Pinch of salt
2 whole eggs (room temperature)
100 g rice flour
4 g baking powder
Dried fruits in syrup

1 teaspoon lemon juice
pistachios, dried raspberries, gold leaf, etc.
▷How to make:
1. Combine water, sugar, rum, and tea leaves in a saucepan and bring to a boil.
2. Add the dried fruits and soak in the syrup for 3 hours or more.
3. Mix the unsalted butter with the sugar and salt.
4. Add beaten whole eggs 1/3 at a time and mix well.
5. Add rice flour and baking powder.
6. Put the mixture into a pound cake mold and bake in a preheated oven at 170℃ for 45 to 55 minutes.
7. Unmold, wrap in plastic wrap and remove from heat.
8. Add lemon juice to powdered sugar to make icing and pour over cooled pound cake to decorate.
