Ingredients
10 large eggs, room temperature
1 C sugar
1 + 1/8 C cake flour, sifted
1/8 C cornstarch, sifted
1/8 tsp salt
1/8 tsp cream of tartar
4 oz butter, melted & cooled
1/2 tsp vanilla extract
1/4 tsp baking powder
Method
Separate the whites and yolks.
Mix the yolks and vanilla extract into the melted cooled butter, then set it aside.
Sifted the cake flour and cornstarch and baking powder together, set it aside.
Place the egg whites, and cream of tartar in the mixing bowl beat at med-high speed till well corporated, about 1 minute.
Add 1 cup of sugar and 1/8 tsp salt keep beat it in med-high till medium-firm peaks, about 5 minutes.
Mix in the yolk mixture into the egg whites, mix well lightly with the whisk, then add in the flour over the egg batter, keep mixing it lightly at 1st, then use the spatula folding it until all incorporated. Don't overfold, once the cake batter losing air, it'll affect the raise of the cake.
Scoop the cake batter into the cupcake mold, let them be baked for 25 minutes at 350°F.
