You’ll find this dish in pretty much every tapas bar in every coastal town in Spain, as well as in all the major cities. We love our fish and shellfish so much that the capital Madrid (which is in the middle of mainland Spain) is a major fresh fish importer, second only to Tokyo.

Absolutely fascinated and pleased to know that Spain/Madrid is the 2nd largest seafood market/consumer in the world after Japan! That means there's a plethora of Spanish seafood recipes to dive into and I am ready for it! I would've guessed it was China!

I tried this dish with a German couple and they mentioned this was a Spanish dish and learned how to make it there. I am Mexican and I would order “camarones al ajillo” and it was completely different - the taste was just not it! I’m so happy I found this, can’t wait to make this fabulous dish! Thank you so much!!

Lived in Spain in the mid 70"s and my wife and I would visit the Casa de Gambas near Plaza Major in Madrid. This brought back many fond memories of our time there. I will try this recipe as soon as I can. Thanks for sharing...

Totally agree with you, and here un Spain it’s unusual to see the prawns without tail, but it is optional. But nice recipe and so much easy!

Hi Omar, in the city Mijas I have experienced several restaurants using white wine in their Gambas al Ajillo (it's written in their menu). I want to try adding white wine to your recipe, but I don't know when I should add it or should I let the alcohol evaporate?

The name pil pil on gambas it's misleading. Pil pil it's a recipe that you can only cook with a few white flesh fish, such as cod, monkfish... I don't know when and why some people and restaurants started calling it like that. I hope that explains

As this dish is so simple I decided to add a few other ingredients in the mix. I added Sobrasada spicy sausage, only a small amount, a splash of dry white wine boiled off and a knob of butter with the olive oil. Also a splash of chicken stock and some soaked dried chillies. Boom! Oh and If you can get them the Argentinian Carabineros prawns as they are the best in the world. Thx for the vid.

How long do you cook tiny prawns that are fully submerged in the oil??

As soon as they hit hot oil, they will turn pink and done. Maybe lower the heat so the garlic/chili flavor has a chance to infused in them. (The thing with shrimp is the longer you leave it there the tougher it gets. Nothing will happen but when they are overcooked they shrink more cause all the water is evaporating. If you are planning to do a lots, then I would do one small batch first- like a handfull. Then another one and another, so you get more learning experience an a good idea how long they need hit that right spot.)
