In case you didn't read the comments, this project ended up failing because garage door motors are not designed to run for any length of time, AND they're not very powerful.
It runs fine when empty, but when I added a load of meat to the mixer, the run capacitor got super hot and EXPLODED! Unfortunately, some of the oily substance from inside the capacitor got into the meat and ruined the batch. I'll be back with version 2 as soon as I find a suitable replacement motor.
