As a previous comment buy a spiralizers. I have a spiralizers and it never fails, you don't have to rely on the strength of your hand, which as you become older your hands become weaker.

I wonder if these would be okay for arthritic hands

Both these instruments look like they're too hard to use, actually, I"ve used both and I'm partial to a third product - The WonderVeg which I just used with large zucchini. The WonderVeg is very similar to other products that I wasn't aware of, i.e., Vegetti Pro and the Spirooli. In any event, I love having the an option for salads and "veggie pasta" dishes.

I love shredded carrots. I use to pile them on when I got a Wendys salad, at their salad bar. They havent had a salad bar in decades, which is last time I had shredded carrots. I always thought they were sweeter. And visually prettier
