IssaGrill's Mora Meat (Chinese Hamburger/Rou jia mo) Makes 4
1st Boil:
water to cover
3 slices ginger
1 Tbsp shiaoxing wine
1/2 lb pork belly
2nd Boil:
1 tsp oil
3 tsp rock sugar
3 new ginger slices
3 garlic cloves
enough water to simmer
2 Tbsp dark soy sauce (sweeter and less salty than reg. soy sauce)
dash of white pepper
spice bag: 1tsp Sichuan peppers, 2 pieces star anise, 1 cinnamon stick, 5 cloves, 1 bay leaf, 1tsp fennel seed,1 whole nutmeg, dried tangerine peel, 1 green onion
Dough:
1 1/2 C all purpose flour
1 tsp yeast
1/4 tsp baking powder
1/2 C warm water
Last minute additions: Long spicy peppers/ bell peppers/ chili oil/ green onion/ hoisin / whatever you want
