IssaGrill's Puppy Paw Hash Browns by IssaGrill
makes 8
2 Russet (baking) potato
1 T salt
Water for boiling
1 T butter
1 T chives
1/4 C mozzarella (can sub for cheddar)
4 bacon slices
Egg glue: 1 large egg + 1 tsp cornstarch
Dredge:
1/2 C all purpose flour, salt and pepper
1 large egg + remaining egg glue + 1 T water, salt and pepper
1 C panko (crushed using ziplock + rolling pin)
Oil for frying
Fry 4 mins per side, or Bake 400F for 12 min, or Air fry 390F for 7 min
Sauce:
The game asks for "Jelly" to be used in the recipe, in the picture it is more orange-white colored. I figured I would take Plum sauce as my jelly, and make it more white with Japanese mayo. Nice sweet, tart, and creamy element to compliment the saltiness of the bacon.
In short: Japanese mayo + Plum sauce

You could get some pine nuts, toast and mix them with the mash. That would add a nice texture and flavor. Then ground up some more and mix those with bread crumbs. At least that's how I plan to make mine.

I guess they use the seeds as fillings Some pinecone seeds are edible, they call 'em pine nuts I believe They taste a bit like cashews

These are better with pinecones. They give the potatoes a nice gin taste but if you let them soak too long they become bitter.

This isn't so much a hashbrown as it is just deep fried mashed potato but it looks amazing nonetheless!

in the game, it actually says that it’s fried mashed potatos in the description! i checked because i wanted to recreate it too lol. i guess that means it’s more of a croquette, but they call it a hashbrown for some reason...

I have a question, can we skip the refrigerator step if we aren't gluing the pieces together? Or is it an important step for frying?

hey zen! its better to cool things when you cover them in panko so it sticks better before frying! so once you cover them in panko put them in the fridge for like 10 mins then fry it
