Traditional German Potato Pancakes are never made from mashed potatoes. They are made with raw potatoes and some other ingredients which make them different from hashed browns.

I used to make these regularly and I used to blend the potatoes. Much simpler than the hand made ones. I am too impatient to do it the old fashioned way. We used to either put honey on them or even jams of some sort. Really a lovely treat. I would totally recommend anyone to try this recipe. You won't be sorry. I love your recipes by the way. I come from Germany but live in Australia now and my mother used to make a lot of the recipes you have shown. I have gone away from that style of cooking sadly but you have inspired me to try them again. Thank you.

@@MyGermanRecipes Yes, I blend the raw potatoes. Goes really well. Blend only a few at a time and just don't blend too fine or it ends up really mushy. Then add all the other ingredients as you mentioned in your video.

We have this dish in Poland as well, difference being our potato pancakes are thinner and onions are optional. Absolutely mouth watering, though perhaps not necessarily the healthiest food out there. I serve them with sour cream only, though they are sometimes used instead of boiled potatoes/rice/groats in a dish. They also make a good vegetarian burger patty substitute. Served with some spicy goulash on top, you get what we call a Hungarian pancake (you'll usually get a single huge pancake, 24 cm in diameter, instead of several smaller ones).

As long as you use a healthy oil then they are fairly healthy especially served with the salmon.

We used to visit a SEWDISH RESTAURANT in my home town JUST FOR THESE. We always had it served with sausages and then we hoped the patatoe pancakes with sour cream and applesauce. We thought it was a HEAVENLY TREAT. THANK YOU for the recipe I've been wanting to make this for my husband WHO'S NEVER HAD. IT

I've often heard the one exception to tossing out moldy food, is hard and semi soft cheese. They say you can cut away the mold, plus an additional one inch past where it was growing and it will be safe to eat. However on medical sites, they advise people that ANY molded food (even cheese) is best avoided by people with weakened immune systems, older adults, pregnant women, infants and young children. To be on the safe side, I think it's sensible to just throw away any food with mold, even cheese... no matter how healthy (and mold tolerant) we may think our bodies are. By the way, I love potato pancakes. Thanks for your recipe.

I agree, better safe than sorry! I remember my grandmother always cutting off moldy parts on Wurst (cold cut) and cheese and anything else, claiming that the rest is still good. It was probably a survival strategy during and shortly after our wars. Today we know better and science backs it up. I think today's problem is that so many foods come in too large packages. They start molding before we can use all of it. But did you know that you can freeze cheese? A friend of me is doing it and she says it works perfectly.

Many years ago I found a wonderful recipe for macaroni & cheese using Fontina cheese (and some Parmesan too.) The Fontina was difficult to find, so when I did locate it I purchased a whole wheel. I froze it in well wrapped 3/4 pound portions. Unfortunately the texture of the Fontina which had been frozen changed. It became crumbly... which it is not supposed to be, and had a flavor change (unpleasant.) It baked terribly in the casserole I made. I regretfully threw the remaining frozen cheese away. An expensive lesson for me. Not all cheeses freeze well. Experiment with freezing small portions. Make sure freezing won't alter your cheese in some way.

@@MyGermanRecipes Better than starving I guess. I’ve also tried freezing pre grated cheese and it also went kind of powdery and looked and smelt ok but it just didn’t taste quite right so I stopped freezing the cheese.

Ausgehseichnet!! Wunderbar!! My favorite is with applesauce. As a single blond man in my 20s, when our Deutsche Amerikanische Bund had an event I always made the Kartoffelpuffern. One Maifest It was so hot in the tent, I shouldn't have, but I tossed off my shirt. I was up on a platform with shorts and boots. Later that afternoon, one of our German ladies came up to me with a grin on her face and said, do you see all those madchen out there in front of your grill watching you? I said i did and said they liked my cooking because they were all smiling and it was hard to keep up with the demand for the potato cakes. She said no Dumbkopf, the grill is at waist level and it looks like you're naked.

Great Video!!! We use to have potato pancakes every Friday for dinner. I love your recipe and think it is better than my own. We usually use russet potato’s when making the pancakes but I have heard Yukon gold potatoes make a nice pancake as well. Have you ever tried using Yukon’s? Thank you for the tip on mold I did not know this🤓

I am using golden potatoes in my video, I guess they are Yukon then? I am still struggling a little with the potato names here. In Germany all potatoes have female names like Linda, Annabelle and so on 😆

My mum alwyas add GARLIC I like them with Yogurt and grind Cheddar chesse. I try with Salmon 😊 SO delicious 😋 Nice video, thank you 😊

I make them in a panini press with no oil - no flipping required. Works great if you preheat first. Takes 7-8 min depending on how you like them.

Looks very yummy!!! I also saw that if you put the potato pancakes on a cookie rack with paper towel under the rack this make the pancakes crispy - because on paper towel the oil gets back into the pancake, which of course you don't want. I have tried this method and it works leaving the potato pancake crunchy on the outside and so tender on the inside. You might like to try it this way and see what you think. Looks lovely, I know these as Reibekuchen, a little different from yours, no flour and the potato grated larger , you can use a little oats to give bulk.

For many years I used potato starch instead of flour. The version with oats is new to me but sounds great, too. They might soak in some of the liquid of the potatoes. I have to try that next time! Thank you 👍

I guess you are asking about the right mixture? Use 1 tbsp of cinnamon on 10 tbsp of sugar. On the pancake, just use as much as you like, I am using about a teaspoon on a pancake.

The whole shredding is weird. In Germany we say schreddern and when English words are close but not quite similar to a German word, I struggle to choose the right word or create new words. Brains ... complicated!!!! :-)

My Oma always used the leftover potato starch from the liquid she squeezed from the potatoes. We last had them with apfelmous but no cinnamon sugar. That was for the milchreis. Do you have a recipe for milchreis?

I might have one. In Germany we have a special milchreis that is made within minutes, here I will have to use round rice which takes a little longer. I will check that out.

In my opinion it wouldn‘t go well with the apple sauce or cinnamon-sugar mix. But if you plan other sides with the potato pancakes, maybe try it?

@@typeviic1 Potato pancakes are not really a side dish. I would recommend making potato dumplings (sorry, no video for it here yet) or the Croquettes from my last video. Enjoy your Sauerbraten!

It's interesting that the water is removed from the potatoes. When my mom made them, she left the liquid in and just mixed the ingredients and fried them

Thats what i learned too, i just learnt about leaving the water in just make the frying process take a little longer than when you remove it to get the crispy crust because the water has to evaporate first - since then i try removing the water ether through a towel (paper towel) or squishing it out (i this case for example) - worth the +1 minute of work imo

Do find that onions dried with hot air are not as strong as the 'open air' dried types? What is Kosher salt - imported from Israel? We use sea salt.

I'm not sure what you are referring to with the onions, can you please explain? Kosher Salt is simply salt without substitutes, it is available in every grocery I've seen in the US and widely used for cooking. Sea salt will do but check if you need more or less since it might have a different strength in taste.

@@MyGermanRecipes Our onions were lifted on top of the growing land, and left for the sun to dry them. Now the farmers put them in big barns and use hot air fans (as in gigantic hair dryers) but they do not properly mature. The land is free much earlier. When we can get them Spanish onions can be 'old fashioned'. You are in the US?

Shred the potatoes or, the potatoes that were shredded. It’s actually a word I’ve not used very often in my life and not for a very long time. I think I would have said you grated the potatoes on a grater.

To be correct in English as spoken in England grated and shredded are not the same thing. Shreddeding would be thin stripes cut with a very sharp blade. Grated is done with a mechanical action against a metal grater. Sorry to be so pedantic, but you wanted to know.

Wir haben unsere immer in der Küchenmaschine gemacht..aber ich kann mich nicht daran erinnern das wir die Flüssigkeit ausgerungen haben..oder das wir Mehl dazugegeben haben..Es ist schon so lange her gewesen, ich glaube ich sollte meiner Mutter schreiben und mal nachfragen. :'D

Hi, also früher habe ich das so gemacht wie Du es beschreibst und die Puffer waren immer ein bisschen labberig und haben ewig in der Pfanne gebraucht. Dann bin ich auf diese Methode gestoßen und habe es ausprobiert. Es funktioniert auf diese Weise meiner Meinung nach besser und die Puffer sind außen richtig schön knusprig. Probier es mal aus.
