Ghana 🇬🇭 Rich Meat pie the flakiest crust ever! chicken meat pie recipe

INGREDIENTS: pie crust;
* 8 cups / 1240 grams all purpose flour
* 1 tsp baking powder (optional)
* 2 cups / 300 grams ghee
* 1 tbsp fine sea or kosher salt
* 1/2 tsp crushed black pepper
* 1/4 tsp granulated garlic
* 1/2 tsp granulated onion
* 1/2 cup / 120 ml evaporated milk
* 1/2 cup / 120 ml water (give or take) may need a few extra sprinkles of equal parts water and evaporated milk
INGREDIENTS: filling;
* 1 large onion chopped
* 2 large carrots chopped
* 1/2 cup celery chopped
* 1 Fresno chili minced
* 4 skinless boneless chicken thighs chopped
* 1 tsp dry thyme
* 1/2 tbsp garlic paste
* 1 tbsp fresh herb and spice blend (optional)
* 1/2 tsp smoked paprika
* 1 tsp all purpose seasoning (substitute with chicken bouillon)
* 1 tsp curry powder
* 1 tsp salt
* 1/2 tsp crushed black pepper
* 1 tbsp all purpose flour
* 2 tbsp olive oil
* 1 cup green peas
* 2-3 extra tbsp olive oil
INGREDIENTS: Glaze;
* 1 egg
* 2 tbsp evaporated milk
** This meat pie recipe yields 20 small pies**

So I was very curious about ghee in baking as I bake but have never used ghee.. heck didn't know anything about it. Ordered a jar on Amazon and being that I wasn't familiar with the taste tried it on some toast first. I didnt like it! However I decided I would still try the recipe. Another thing I wasn't too sure of was evaporated milk in the dough because I thought it would make the pastry too sweet. Fast forward to about 11pm last night, at this point I was done baking ( it took a while because I started late in the day plus I made two different pie doughs) and took my first bite. Nanaaba's Kitchen, I throwey salute for you (as my fellow Nigerians would say)! The deep, nutty taste of the ghee did not in any way affect the overall taste of the chicken pie crust, it was absolutely delicious plus IT WAS SO FLAKY which is what I was primarily trying to confirm with the use of ghee! Honestly your recipes have never disappointed when I replicate them and I just want to encourage and thank you.

This looks so good. When watch Nanaaba's video's it reminds me so much of my grandmother Lillian and her 4 sister's cooking together in the kitchen. They were from Louisiana and made EVERYTHING I MEAN EVERYTHING from scratch. I really miss them. I use to sit at the table and watch and learn from them God rest their soul's. So THANK YOU Nanaaba for all the wonderful recipes and video's.
