Ginger chicken is a Hawaiian favorite among Chinese and other nationalities. All Chinese restaurants in Hawaii list this on their menu. It is eaten cold but may also be hot. If you ask for ginger chicken outside Hawaii, the preparation is very different and is usually stir fried with soy sauce and other ingredients. I once went to San Francisco and was very disappointed that a restaurant that I went to could not duplicate the formula I grew up with. This recipe is so simple and delicious and brings back memories eating it at home or formal dinners. Try this and ginger chicken may become your favorite dish.

I lived in Kaneohe for years and would order it when eating at Kin Wah and loved it. Never in the last 20 years have I gone to any type of oriental restaurant and find it on the menu unfortunately. So happy to find this recipe. I actually made it in Hawaii once but not understand about ginger I grated a handful for the recipe and then my hands were burning like heck, lol! Thanks for the recipe!

I put pieces in my mini processor, spread it in a small shallow tray, freeze part way, then cut it in squares, freeze again till very hard. Put pieces in a ziploc bag so you only get out what you need. Here's a tip for peeling off garlic stems. For a whole head, put the whole thing in a bowl, zap for 20 seconds, cool enough to handle. The skins will come off easily. I usually grind them in the mini processor, put it in a small jar and refrigerate. It's easier for me since I do a lot of cooking. It lasts at least 2 weeks.

this is definitely one of my favorite dishes in our local Chinese restaurants -- the fact that it is served cold makes it perfect for our warm HI weather!

so glad you showed this recipe, never knew how to make the sauce. I make my chicken the way Uncle Melvin told me. Boil your water, put your chicken in, put a lid on it & turn off the stove. Let sit for an hr. comes out perfect every time.

It took so much searching to find a video on chopping the chicken in multiple pieces with the bones intact. Years ago there was a restaurant that served ginger chicken as such and I loved picking through the bones. Thank you so much for this tutorial 💗 Best wishes .

Loved this video! Mainlanders may not know what "cold ginger chicken" is but they may know it as "white cut chicken". It's poached as in our local method, and served cold or room temperature with minced ginger, chopped green onions, and garlic. Aka "Cantonese poached chicken" or "bak chit gai" 白切雞 in Cantonese. (I still think Hawaii's is the best). 🐔🍗🫚😋

This was my mom's favorite dish so we ate it often as I grew up in Honolulu in the 60s. I make the sauce with lots of onion and cilantro as well. I don't cook it though. I just add the ingredients in a food processor and whizz the ginger and garlic with some oil and salt until the texture is right. Then I add the cilantro and green onions to taste and pulse it a few times. I adjust the salt and oil at this time as well. I find that the salt and oil tames the ginger spiciness (a few drops of sesame oil also helps) and it tastes delicious. Pro tip: the ginger sauce tastes great over anything. Tofu, salad greens, white rice, etc.

One of my favorites, eaten hot or cold, favorite in restaurants. Once I asked for this in SF Chinatown, they could not understand what I was talking about. Came out as stir fried chicken with ginger slices. What a disappointment!

Tried to order it in SF but they didn't know what it is. Just stir fried it with pieces of ginger. Hawaii has dishes that are not truly of Chinese origin.

Yes, I always make a lot too. Never order from the mainland. Once I tried to order it in SF but the cook could not understood what I wanted. He just stir fried chicken with some ginger. Awful!

@@HawaiisPickleLady My first-generation (Hong Kong) Chinese friends in Seattle never heard of this dish and neither of the restaurants there. It would be interesting to know where this dish originated. They do love how Hawaii does Oxtail soup though.

It’s a popular Chinese “white boiled chicken “, dish, simple and delicious!! Drizzle some sesame oil and it’s amazing!!! Instead of salt, use light soy sauce.

Thanks for this recipe. The sauce is a bit different from how my Chinese dad made it. He usually put soya sauce and a little salt into the sauce and I must say the soya sauce enhances the taste. This is similar to the Hianese chicken. I love your recipes bc it reminds of my dad’s cooking.

This is definitely another take on making a chicken and ginger recipe. I did notice when you took chicken out of the broth, though it sat for an hour covered on the stove, there was still steam rising from the chicken. You then refrigerated it to cool. It is unsafe to put hot food in fridge because it promotes bacteria growth. Look it up, it's true.

You won't regret it. One of my favorite recipes but unfortunately my son doesn't care for it. It must be a Hawaiian Cantonese dish because we grew up with it. I went to SF and told them what I wanted and they didn't understand even though I explained how to make it. It came out stir fried with pieces of ginger. What a disappointment!

Save all the bones to make bone broth ... freeze for soups, etc. ... no waste, all of your product is used without waste ... money well spent.

It's like Hainanese chicken. Boil chicken with ginger. The sauce, same as what you did but add soy sauce and a bit of sesame oil . Then you can also cook rice with the water you boiled the chicken with.

@@HawaiisPickleLady I just NO like having to disinfect my tools and surfaces. Less steps for me is what I prefer. 🙆 Next Time the Meat butcher will get the glory for cutting chicken. I clean and gut my own farm raised Tilapia.

In SF, we call this “Bock Cheet Gai” (white cut chicken). It is served warm or room temperature (not cold, out of the fridge) with a ginger sauce on the side. If we’re lazy, we simply go to the Chinese deli and buy a bock cheet gai or if it’s available a “wong mo gai” (yellow hair chicken) which is a free run chicken. The chicken used to make bock cheet gai is a whole chicken which includes the head and the feet, which we buy from a Chinese supermarket. It’s tastier than the broilers/fryers you get from regular supermarkets. This dish is also called “chung yow gai” (scallion oil chicken) in Chinese restaurants. 😉

Thank you for the information. Never heard of wong mo gai, so interesting. I remember mom using the whole chicken especially for the annual grave visits with all kinds of food, whiskey, candles, fireworks, folded money. Being 3rd generation, the family followed certain traditions but unfortunately I don't speak Cantonese but remember lot of the food words. But I understand all the Chinese ingredients you name. @@HawaiisPickleLady Ya, this dish is famous pretty much all southern Chinese people. It is commonly known as "蔥油雞”, literally "scallion oil chicken". It is the ingredient of scallion or green onions that is prominent in the name - not ginger! That's why the waiter may have been confused. I think the plainest and most practical way to describe the chicken in English is "cold chicken with ginger and scallion oil/sauce".

There is a pickle mango recipe in the website. Vary it by adding li hing mui, coloring. It's basically the same. My formula salts the mango first, rinse to get out all the water which dilutes the sauce. It also depends on the kind of mango, some are very sour so you need to let it soak longer.

Aloha! Wouldn't this be bak chit gai (poached chicken)? When I go to China Town I make sure I look for Cantonese menus as they tend to have cold ginger chicken. I can't wait to try this recipe. I made the Chinese chicken salad today. Mahalo for your recipe it was so ono. Wo Fat Restaurant on Desert Inn makes cold ginger chicken.

Yes, it's the same. But I couldn't find it in SF. I tried to explain but it just came out as sauteed chicken with green onions. Speaking of Wo Fat here, my friend and I went there and it was the worst Chinese food we ever ate. The sweet sour spareribs was red and dry and didn't have any sweet sour taste to it, was bland. The fried gau gee had such a tiny piece the size of a pea. My favorite is roast duck in noodles. The duck was so dry and tasteless, like it was 2 weeks old or more.

Thank you Auntie for sharing this recipe! I tried this recipe but with just thighs only & with olive oil. It wasn’t bad but I know it’ll be better. As soon as I get my COVID shot, I’ll head out to my nearest Asian market for the Chinese peanut oil.

Looks so delicious. Is it ok if I add a little bit of sesame oil in the ginger sauce? Oh, I'm from Hawaii too but now I live in Arizona. :-)

so many of us have moved for different reasons, the main one being the expensive. I'm sure Arizona has cheap prices like LV. Fine to add sesame oil, gives it a kick. Don't be afraid to experiment, there's no right or wrong.

Eventually will do that. So many recipes. You have to use the right kind of Chinese flour, not rice flour.

No salt, but you can add some. The flavor comes from the sauce.
