We always had oxtail soups in our house. My dad, who is Chinese, would make it all the time. Those days oxtail was cheaper than now, because hardly anyone ate it. My dad used to work in a Chinese restaurant as a young man so he knew how to cook. A lot of your recipes and dishes, my dad made. Sorry I didn’t take enough interest in cooking. Love you channel!

Hope you learn a lot. I'm trying to replicate all the things I grew up with. My mother always said I should come and watch but I was too busy playing. It was in college that I needed to eat and didn't even know how to cook rice. But I learned fast and watched everyone since.

This looks and "smells" (well in my mind) so delicious. My Grandmother made oxtail soup...back when I know it was not so expensive. Probably the first meat I ever had. Now oxtails are a "special" order .

my fab soup but yes its expensive to make sometimes better to eat it at a restuarant but your method is different i wash the oxtail boil it for it to release scum n rinse it out at least once sometimes twice if lot of scum but i never soaked the raw oxtail in water do u think that helps with the scum is it the blood that makes it scum n cloudy? i will try your way next time my mouth is watering i like my soup with chinese parsley n grated ginger n kai choy thanks for your video i learned something also good idea to put the star anise n ginger in cheescloth
@HawaiisPickleLady
@HawaiisPickleLady 3 жыл бұрын
You'd be amazed how much blood comes out. Your way is good to boil several times to rid scum. The blood probably contributes to scum too. You want the soup as clear as possible.

Could you use a beef shank like in Mexican Caldo de Res? It’s obviously cheaper but still has a lot of the fat and marrow that the oxtail has. Wondering if you have ever used that cut of meat as a substitute.
