Rice-flour bread dough
150g rice flour
10g sugar
1g salt
5g Oil
2g dry yeast
140g water
(If using Shirakami Kodama yeast, pre-ferment with 10g lukewarm water and add 130g water)

3g psyllium
Cinnamon filling
30g butter
20g sugar
6g skim milk (if available)
1/2~1 teaspoon cinnamon powder
Icing
20g sugar
Small amount Water
10 minutes at room temperature
→Fermentation at room temperature for 20~30 minutes (about 30 minutes if using Shirakami Kodama yeast)
→190 ℃(374°F)/18 min.
