60 g buckwheat flour
60 g milk
2 g dry yeast
For the dough:
210 g corn starch
30 g tapioca starch
85 g sugar
6 g psyllium husk
10 g xanthan gum
4.5 g salt
2 g dry yeast
140 g milk
75 g egg
25 g aniseed liqueur
65gr butter
Grated zest of 1 lemon
For the cream
275 g milk
2 egg yolks
40 g sugar
20 g corn starch
1/2 cinnamon stick
1/2 lemon peel
7 g butter
For the syrup
75 g water
75 g sugar
25 g aniseed liqueur
To decorate:
2 or 3 tablespoons of sugar
A few drops of water or of aniseed liqueur
Egg for brushing
