Grew up having gumbo as our main Christmas dinner course. I live 2 hours from New Orleans... my parents have always cooked it just like chef Kevin Belton. Love to watch him cook. Thanks for posting this video.

I made my first gumbo for thanksgiving once while pregnant. I turned out phenomenal but I've never been brave enough to try again...until now! And I was having a shit day until I watched this. Now I can't stop smiling :)

hey Jim! This just in from Chef Kevin: "Depending on the amount I would start with 1 tablespoon and go from there. It will thicken as it's added. File' should be added when removed from the fire before serving." Happy cooking!
