For those wondering how to nail the fillet like him consistantly: after searing it in the pan like he did, heat the oven to 150°C (~300°f) and cook it until 52°C (125°f) internal with ventilator on. It should take about 40 minutes , but check it with a thermometer. You can also additionally baste it with butter every 8 - 10 min for more tenderness, than after it's done let it rest for 10 - 15 min.

@@charger7642 Idk, for me in my oven it takes longer, maybe 40 min is a bit too much for the fillet as it is smaller than a whole tenderloin like that I usually cook, but either way you should really check it with a thermometer, because the size of the piece of meat that you're cooking can be different each time, also every oven is different, so you can't really tell by the time of cooking wether it's done or not, therefore I reccomend using a thermometer, especially on more expensive cuts like fillet..

@@taitrunkl7086 Steak is generally oven finished at 400f / 200c for 8-10 min (not a rule just how I've always seen it done) since you just want the heat to soak through the meat, a lower temp is fine it will just take longer. In the video at around 4:48 you can see his oven set to 200c which is 392f.

Lol yeah that piece easily weight 3-4 pounds, maybe a little less but would be around 40-50 dollars for a like a basic thing youd get at the grocery store and im sure butchers who get more premium meats, maybe going up to like 80 or more. Definitely not something someone just buys casually.

I watch this video over and over, but always love how at @4:00 he doesn't talk about time searing the ends. The video is just a quick cut. I do love the details in these videos, but also maybe treat us like we don't have a star under our belt, and actually explain the steps.... "It's going to sit in the oven for 8 to 10 minutes" at what temperature?... Like the video is good, but gives very little detail.

yeah, I think its a waste to use such meat for a sandwich. The art of making a good sandwich recipe is figuring out the method the combination of ingredients that create a tasty sandwich WITHIN A SENSIBLE BUDGET for A SANDWICH. Its not meant to be an expensive dish. If you have the money to spend though, great, why waste it on a sandwich though? Put that money to its proper use in a proper dish for prime meat.

Meat in general is very cheap here in South Africa. If you ever feel like trying out all those prime cuts, come visit our country. A fillet like that will cost you the equivalent of 30$. We also have wild meat, which is more expensive, but a lot more tasty and healthy if cooked properly.

It sure sounds good! My salary wouldn't allow me to justify that cut of beef, especially that size. I guess I could improvise by getting a single filet split for 2 sandwiches and figure out the finishing cook time. If you're a cook, would that work?

What temp did you put the oven at? How long should the steak cook in the pan and on what setting? How many tomatoes? How much salt and pepper? I’m trying to replicate this, but I’m not sure how to replicate it with measurements and heat. I don’t want to butcher this so, do you have any advice

@@macycharmin Yes, but I would just cook it in a pan with that small cut. No need for the oven if just cooking one or two servings.

@@Jimothyjohns 350F on the oven temp. In the pan the point is to simply sear the outside to add a little color, so heavy pan, high heat, oil, sear all sides and remove from pan. Like all steaks, lots of salt and pepper on every side. Find the best quality cherry tomatoes (multi-colored, heirloom if available). It's good to use a couple of pints of tomatoes since they are going to cook down.
