The Grandma Pizza originated at King Umberto's in New Hyde Park Long Island. Having grown up in Long Island I've been eating this type of pizza for years. In this 1st episode of the Grandma pizza series, I've duplicated the flavor and texture of the original.

I tried so many recipes ...I ended up using 2 1/2 c flour, 1 pkg rapid rise, 1 tsp salt. I found sugar had no real affect. 1 cup very warm water with 2 tbsp oil mixed in. Mix...knead in bowl 6 min adding flour til less sticky. Rise 10 to 20 min in bowl covered. Oil my 9 x 13 x 2 pan. Press out dough...shredded 1 lb mozz...three strips of sauce, add pepperoni or sausage or mushroom or mix. Pecorino and or Parmesan on top. Bake till browned and bubbly.....try it. Mine comes out super nice thick 2 inches! Detroit style pizza.

I've only recently started making pizza at home. I have my method down for Chicago thin crust using a pizza steel. Your grandma looks legit, though. I might give it a whirl. Subscribed.

I don't know if it comes from Umbertos. My mother who is from Celano, Italy was making me something very similar at home when AI was a kid and we were never at Umberto's. I think the basics of that style are universal to the Abruzzo region of Italy, but I'm guessing. All I know is a lot of the Italian moms I grew up with in Rochester did a similar thing.

I grew up in New Hyde Park in the late 60's and early 70's, about 1 mile from Umberto's. This was my absolute favorite pizza. Sitting here smiling... THANK YOU!

I grew up in Manhasset in the 1960s. We had Gino’s Pizza on Plandome Road. A large pizza pie cost $1.50 ❤️

It's nice to have a chill atmosphere and not feel like I'm about to destroy the planet by using the wrong brand of cheese or anything. I've been getting that vibe from most other cooking channels, but your vids feel quite reassuring so it's really nice to have you here mate.

Thank you for this recipe. My Grandma, who lived in Lynbrook, used to make this pizza when I was a kid. I never thought I'd be able to repeat her success until I saw your video. I made this pizza for the first time today and every bite brought back fond memories of my childhood eating in my Grandma's kitchen. Thanks again and God bless you and your family.

Today was our mother’s 90th birthday. Offered to cook anything she desired & she wanted pepperoni pizza & chocolate cake! My brother & I followed this recipe adding the pepperoni. It came out great! I bought a Wegmans ultimate chocolate cake for dessert / wow! So, when I asked her about Mother’s Day, she said let’s do another pizza! My brother has this exact pan so we are now feeling pretty confident that we can attempt this again! Thank you for this great recipe. We love your channel & are wondering if we are somehow distant Italian relatives, lol! 😂😉

This is one of the best pizzas I’ve ever had I can’t believe I made myself. Great dough recipe. I did a 72 hour cold ferment. The Lloyd’s pan is a game changer. Thank you for the recipe and for sharing your knowledge!

Newbie to your channel. I watched this video and was intrigued….I am 62 and have never made a pizza at home that was worth making again. Your instructions were so easy to follow, I decided to give it a try. Let me say, it exceeded my expectations! The dough was so easy and satisfying to make. Per instructions, I watched closely during baking. The pizza turned out perfectly crispy with just the right browning on the bottom. The pizza was delicious and my husband loved it as well! Since I have never found a good homemade pizza dough recipe, I have been guilty of getting a frozen pizza and doctoring it up. No more, this is now my go to pizza recipe! As others have said, I can’t believe I made it myself…..thank you so much 😊

I got into pizza 2 years ago when my wife got me a pizza oven for my 40th. I’m now absolutely obsessed and can make pizza at home that easily competes with any restaurant I can find, and I’m in NJ which is known for good pizza. It’s amazing feeling to be able to create something at home

Finally, you have given me my Grandma’s pizza recipie, she passed without leaving her recipie, she never wrote anything down. We had this pizza every Friday with fried flounder! I also found her Pasta Fazoole recipie on your channel! I am subscribed and so happy to have found your channel! Keep the recipies coming! You are authentic, old world! My grandparents emigrated from Italy in the early 1900’s, they opened a deli on 122nd st, back then! Brought all those recipes from the homeland, and thankfully you are sharing all of this delicious food! Thank you, thank you,thank you!

I’m 70, and for the past 30 yrs. myself and my siblings have been trying to figure out her recipes, I literally stumbled upon your channel, and amazingly, there you are, cooking just like she did! I am writing down EVERYTHING, your recipes are going into a family cookbook, credited to you, for passing down to future generations! Your channel has truly been a gift!

This was fabulous. The bottom was nice and crispy, a little dark, but that's how we like it. Now, the dough, snatching with it made me roll my eyes...BUT it was so worth it. Best dough ever! I could have just eaten just the crust. My husband kept saying, "This is good, I mean really good. Do you know how good this is? it's really good" . We ate almost the whole pizza! Thanks again for the BEST recipes.

Thanks very much! Just keep checking the bottom when you put it in and move it up right when it gets to the color you like. It's so hard to give an exact time for this. Also, if you have a coil at the bottom of your oven it's very important to let the oven preheat for along time and get the pizza in immediately. If the coil comes back on, it can burn the bottom quicker.

I love "Cento Whole Peeled Tomatoes", buy 'em all the time our our local super market. I've never seen them at our Costco, will have to look for them next time I go.

I watched this video and thought it was very well done. I’m no critic, but it had just the right amount of explanation and demonstration. I have tried this out twice. The first time it came out pretty well. The second time I tried it, I kid you not, it’s the best crispy crust pizza I’ve ever had. Thank you very much.

Try using my grandma's secret, coat the pan with crisco, works great, no snap back and still a golden crust. One and done.... If you want to let it rise after fine, or just cook it up either way, try it till be amazed. My grandfather used basically this dough, poked anchovies into the dough and finished it off with crushed tomatoes and Parm, no mozzarella, and he was straight from Italy....

Not sure if you still see comments from this video but I gotta tell you this is the best Grandma pizza I've ever made. I finally broke down and bought a digital scale and followed your dough recipe to the tee and it was perfect. This will certainly be a staple in my fall/winter dishes. Thank you and keep on posting. P.S. I also make your Pasta Fagioli and shrimp oreganta pretty often and they're on the money too!!

In western New York does Grandma pizza does not have this type of melted cheese on it. It has grated Parmesan and it’s amazing.

Made the investment in a Lloyds grandma pan using your recipe. I’ve been experimenting with a lot of different dough recipes and I have to tell you, this was excellent! Was really impressed with the results I got from the pan too. Great video! Really easy to follow along and your write up in the description was perfect. Thank you!

Thanks! I tested a lot of dough recipes before settling on this one. It is pretty close to what New York pizza shops are using, with the major difference being the flour brand. I went with King Arthur because it's easier for people to get versus All Trumps. Glad you're enjoying the pan too. It's awesome for this type of pizza!

This episode right here shows all the reasons I love this channel. You educate about HOW to cook and why. You give information about costs and basically say that you dont need all the boojie ingredients most other KZfaq chefs say you have to have. You make me wish I had an Italian grandma!

What a sweet name for a sentimental childhood treat! My mom used to make this is the 1970s and she’s not even Italian. (She learned it from her Swedish mother-in-law, who was taught to cook by Italian grandmothers in the neighborhood who took pity on her when she was a new bride. Welcome to America!)

I made this yesterday. Did a two day fermentation on the dough. It came out fantastic! The dough first came out of the fridge very dense so had my doubts. But after warming it for hours, being patient for room temperature, it worked very well. Thank you!!

All right! Best pizza I ever made is my first attempt with this recipe and set of instructions. I couldn't source exactly the same ingredients, but I think I found good substitutes. I have no complaints. I still need to dial in baking time to crisp the crust up towards the center, but I think this video is pointing me towards the pizza of my real grandmother, i.e., the best. Thanks!

Bought the steel, did the work and it's a game changer! For 1/3 of the cost and easy work to season it.... Provided you have a container big enough to soak it. Thanks, works awesome!

Thanks! I'm glad you're enjoying the pizza videos. There are three main types of pizza served in most of the pizza shops in New York. Regular, NY Sicilian, and Grandma. There are of course some places that try to do Neapolitan, deep dish, and even Detroit style now, but those are the extreme minority and very niche. New Yorkers tend to gravitate to the three mentioned above with regular far outselling all of them.

Hi! I'm always learning something new with you (never thought of putting the slices of mozzarella under the sauce, this is great! Also serves to hold the dough corners in place, always challenging and time consuming!). Love all your recipes...! Prepared multiple times your manicotti's recipe (my husband's favorite) and your eggplant rollatini (my favorite). Many thanks, can't wait for the upcoming vodka pizza!

Looks really good. My grandma made her own. Just regular flour and tomatoes she canned from her garden. She didn't use cheese. It was more like focaccia bread than pizza. And it was all about the bread.

You can use a 80 percent hydration dough in a deep dish pan just dump in and put in warm area to let yeast and hydration do all the work absolutely no nervous dough to stretch. Make sure you use a well oiled pan for crispness

Had never heard of grandma pizza before. Seems like a classic 50s-60s homemaker recipe for someone with good basic skills, and with dough fermenting in the fridge all the time, you could have dinner on the table with very little work and not much clean up. Elegant presentation. The ingredients and method are clear to a beginner, though this is more sophisticated than is evident. Very good vid.

I love to make my pizzas in that kind of a pan, the crispyness is Awesome! Yea it's amazing how 1 minute can turn around the doneness of that dough! Been there done that. I like to pre cook my dough around 5 minutes at 475 degrees with a little sauce on top of the dough before I put the rest of the sauce and cheese on the dough, and then lower the temperature down to 425 for around 12 to 15 minutes. My oven gets very hot so if I'm not careful the cheese will burn. It's fun experimenting with all dough recipes, the possibilities are endless. Your videos are great! I enjoy and learn a lot from you! Thankyou.

It reminds me of the sicilian style pizzas popular here in Rhode Island. Super simple, but a good crust, sauce and cheese is all you need.

NYT Cooking sent me a recipe that is similar to Grandma but you use a frying pan instead of a sheet pan. I used your recipe and their frying pan idea. It worked really well. I used my 10 1/2 inch and 12 inch cast iron pans. This allowed me to make two different pizzas to suit the taste of my family. I need to play around with it a bit before it's perfect, but it was a fun twist.

King Arthur's Bread Flour is usually available at Walmart for the least $$ I've seen anywhere. In fact, King Arthur even tells you that if you call them. It is awesome bread flour.
