Today we're making an amazing sheet pan pepperoni pizza. We'll be using the same dough from episode 1 of the Grandma pizza series. This pizza uses Boar's Head natural casing pepperoni (substitute Margherita or Hormel Rosa Grande) and Calabrian chili paste. If you don't like spicy omit the paste, but it's good. Really good!

SPICY CUPPING PEPPERONI GRANDMA PIZZA
INGREDIENTS
1 (24 ounce dough ball) - use dough recipe from episode 1 of Grandma series
1 (28 ounce can) San Marzano plum or high quality crushed tomatoes - will most likely not need all the sauce
1 (6) ounce stick of Boar’s Head natural casing Pepperoni -sliced thin ( Hormel Rosa Grande and Margherita brand work well too)
1-2 teaspoons Calabrian chili paste - or more or less to taste
¼ cup finely grated Pecorino Romano cheese
3 cloves garlic - minced
½ cup olive oil - divided - plus more
~12 ounces sliced mozzarella cheese - You will need enough slices to cover the pie completely. If you can find pre-sliced mozzarella I recommend using it.

I feel bad I live so far away in Edmonton but we have an excellent Italian Centre that has an amazing deli and other selections similar to yours. You clearly love cooking. Funny. I eat Calabrian chili or Sambal on pretty much everything but never thought to put it on pizza. That's a beautiful pie. You're doing great with this pizza series. You're capturing the NYC Italian mistique very successfully! Fun. Fun.

My suggestion for the watery sauce is to slowly cook it and reduce it down to whatever consistency you want. I like the intense flavor of the tomatoes when it condenses down.

Thanks! I assure you the whole pizza was eaten that day. Prior to this one I filmed and ate the buffalo chicken pizza so I was a bit full. I realize I should taste the food more to complete the episode.

Looks good. I use a lot more oil and skip the paper towel to spread. Just use the dough. Hormel makes nice roni cups and saved slicing the pep stick. I also alternate prov and mozz slices.

I buy the whole calabrian peppers that will melt your face off if you eat them whole, but if you split them and scrape the seeds out they make a great final topping to any pizza.

Go complete Grandma style and use crisco to coat the pan and it doesn't snap back, it's a one shot deal, but yet crispy bottom. Works awesome, give it a try.

Great video, have made Detroit style pizza's in a similar fashion. Cooked the sauce until it reduced and thickened and used a Detroit style pan. I just happen to have a 12x16 steel pan which will be in service this weekend making New York pizza's Thanks for the great videos

hey how you doin ! i been following you for a while now and love the content. i have one tip for you that you may enjoy, i’m from brooklyn and my great grandma used this trick when making her pizzas , she made them till she was 101 years old. she used butter for the bottom of the pan instead of olive oil, give it a try, it solves the whole problem of the dough slipping back to itself when you try and spread it. but anyways thank you !!

I made your pizza dough yesterday and am planning on making pizza on Friday. Not sure yet if I want to do Sicilian style where you par-bake it first, or this way where you put the toppings on then bake. I'm curious, would a 9x13x2 pan work for this amount of dough? (I used the Sicilian recipe with 497g flour) Or would that be too small of a pan? Too tall? I do have a shallow sheet pan (just shy of 1" tall) that is 15x10. Would it make much of a difference in the final bake? Please halp! lol

We eat it all. All the recipes I make are for my family. Often they'll make short appearances in the videos. My son made a brief appearance in this one.

Looks great. When you finish the cook, putting it on a cooling rack to cool, will give you a crusty pizza.

I'll save the strained juice and use it to rehydrate tomato sauces that have gotten a little too dry.

when you put the pan in the oven to cook, do you cook directly on the rack or on a stone? Thanks.

Just on the rack. No stone for this one. Starting on the bottom rack and checking for browning after the first 10-12 minutes is what I recommend. One brown and crisp, the pizza can be finished towards the top of the oven so that the bottom doesn't burn. I've further refined the instructions for all of these Grandma style pizzas. The full printable recipe for the standard Grandma is now on my website. This one will be there in a few months.

@@SipandFeast Thanks for your prompt reply. Fortunately Tropical Storm Henri went to the east. FYI - I grew up on Long Island and go back frequently on the weekend. I have been making NY style pizza for years. I use Caputo Americana and Grande part skim mozzarella. Both products are excellent. PS - If you like Little Vincent's in Ronkonkoma, you might want to try Branchinellis in Hauppauge. Great Sicilian pie amongst others. The downside is besides the excellent food, it's not a good place to dine. Drinks served in paper cups etc.

You can absolutely freeze the dough. Just defrost it the day of and let it warm up a bit before stretching. I gave three options for the pepperoni in the written description, because I wasn't sure what people could find. Hope you enjoy it!

So I live in Suffolk County Long Island. There are a ton of great places here. My opinion is bad places don't last long in New York because one can just go to the next place in the same town. My favorite out where I live now for a regular pie and heroes is Little Vincent's. They are famous for their cold cheese slice. That place is always included in the top pizzerias in America list. When I lived in Nassau I used to like Gino's and Umberto's. Umberto's invented the Long Island Grandma pie. Years ago when I lived in Manhattan I used to order from Totonno's (cold fired pizza) and they were great. That place closed and now they just have the Coney Island location. I've eaten L&B Spumoni pizza and a bunch of other great places. The one funny thing is the place that had a lot of not so good pizza was Manhattan. When I worked downtown the owner used to buy pizza every Friday and test new places. Maybe he was just trying to save money and buy from cheaper places. Who knows lol.

Here's my question, I can't eat that much oil - it plays havoc with my digestive system. What can I expect if I only use a little oil to keep the dough from sticking?

You can lower the oil for sure. Just make a note of what you used, and if necessary bump it a bit the next time. This type of pizza does a need a decent amount.

The only low-moisture mozzarella available here is the pre-grated stuff, covered in potato starch. I can't make these.

I've been following your channel for several years and absolutely love your recipes. I'm 62 and have been cooking since I was really young, and have always wanted to make homemade pizza. The short story is that, after three attempts at the most basic pepperoni pizza and the Sicilian, my pies are a failure. I've practically memorized your videos and have followed them to the letter, but my dough will not cook thoroughly. This evening I set the temp to 500 - the max on my oven - and followed your instructions, but everything cooks except the dough above the bottom crust. After 23 minutes the dough is barely past a gooey mess and not edible. I buy my dough freshly made from a local grocery store, and they use it for store-made pizza, which is delicious. Sorry to drone on here, but I'm beyond frustrated. I must be doing something wrong, but can't figure out what it is. I didn't want to waste your time, but your website said to post responses under the specific recipe, so here goes. Any help would be so appreciated. I'm not a quitter, so I really want to figure out how to make a success of this and the other pizza recipes. I'm grateful for your channel and your wonderful videos and family. I think a possible culprit is a cold oven plus a really thick crust and lots of toppings. I would try an oven thermometer to make sure you actually have a 500 oven. If you do, I would do a long preheat, perhaps try a thinner crust, perhaps partake the crust before toppings, don’t overload the toppings, and try using a cast iron skillet for your pizza pan. If the pie comes out not crisp/cooked in the middle, you can add some more heat on the stove using the cast iron pan without killing your toppings. Good luck.

I dint have a Lloyd pan but use an iron skillet (12 in) and finish browning on the stove medium heat for about 5 mins., works every time!

@brucebaby77 You’re following instructions on a homemade pizza video and buying premade dough? How on Earth do you expect that to work out? All of his specifications are made according to his dough recipe. Make the dough as he explains it and then cook the recipe. This is like saying, “I followed all the instructions on your video to change a Honda’s radiator, but my Ford’s radiator isn’t running properly no matter how often I repeat your steps”.

We like your recipes, generally speaking, but will never understand the weird American attitude to this kind of food. Pizza is a frugal meal that is supposed to celebrate simple, high quality ingredients, not a greasy, overstuffed clownshow of a thing that looks like it should feed 10 people for a week. I feel a bit sick looking at this much salami on it and I don't think any other country in the world would go so weirdly overboard, to the extent that it disregards the ingredients. It's the same with American BBQ; it's just so grossly excessive. Sorry!
